    On the way from coastal Casitas to Papantla–a drive of about an hour–you know we got hungry!  And what better to have for brunch than roadside tacos, Veracruz style: on the left is milanesa de pollo (lightly breaded and sliced chicken breast with rice, black beans, and salsa) and on the right, pollo deshebrado (boned, simmered, and shredded chicken) with the same condiments.  The tacos were truly wonderful, we were delighted with our we-got-lucky-with-roadside-tacos de guisado, home-style tacos filled with stew-y deliciousness.

    The pyramid El Tajín was our very first stop in Papantla, Veracruz.  We went straight to the pyramid site, even before checking into our hotel!  El Tajín is not just one pyramid; the archeological site is an entire city. The name, in the Totonaco indigenous language, is believed to mean "place where temples join and smoke is constant", the latter due, to the long ago burning of copal incense in the temples.  The photo shows the pirámide de los nichos (Pyramid of the Niches). The name of the pyramid refers to the 365 "windows" placed on all sides of the structure; because the number corresponds to the number of days in a year, this pyramid has received tremendous attention from those who study the calendars and the cosmic vision of the ancient Totonaco inhabitants who, sometime between 1700 and 800 years ago, built this city.

    Los Voladores de Papantla (The Papantla Flyers) practice this impressive spiritual ritual on the El Tajín grounds. We made a point to arrive in time for their daily exhibition; the rite had its 450-year-old origins as a form of prayer for rain after a severe drought which left the Totonaco people without food.  The Totonacos believe that these prayers to the rain gods brought life-saving rains back to the region. The prayer ceremony initially began with the cutting of a tree tall and straight enough for the flyers; today, the flyers climb the 30 meter high metal pole that you see in the photograph above.  Five men participate in this prayer; one remains on a platform at the top of the pole to play ritual music meant to mimic birdsong; the other four launch themselves from the platform to fly upside down to the ground.  There is ceremony and prayer form in every part of the rite.  The pole is the connection point between earth, the underworld, and the sky; the flyers represent the four cardinal points and the four elements (earth, air, water, and fire); each rope is wrapped 13 times around its flyer, and the flyers circle the pole 52 times, representing the length in weeks of the Mesoamerican great year.  All photos and videos copyright Mexico Cooks! unless otherwise noted.

    In the Totonac region, the flyers are required to know and speak Totonaco.  Most boys and young men learn the rituals and the dances from their fathers and grandfathers. Mastering the ceremonies can take as long as 10 to 12 years and the flyers and dancers usually commit themselves for life. In this video, a boy no more than three years old carefully followed the steps and gestures of the dancers on the platform.  I asked; the boy is the son of one of the dancers, learning from his father and the rest of the group.  Video copyright Mexico Cooks!.

    When we finished at El Tajín, we paid a visit to the well-known Totonaca cocinera tradicional (traditional cook) Martha Soledad Gómez Atzin at her cocina de humo (traditional kitchen where cooking is done over firewood), close to the pyramid site.  Her group, Las Mujeres de Humo, continues to give demonstrations and classes in Totonaco regional cooking.

    Beginning in 2000, the cocina de humo has formed a part of the international festival Cumbre Tajín, which promotes music, art, and traditional cuisine in northern Veracruz.  The Cumbre (summit) was founded under the impetus of the then-governor of Veracruz.  The realization of the event met with strong opposition from INAH (National Institute of Anthropology and History), from the custodians of the archeological site, from students at ENAH (the National School of Anthropology and History), and from the central organization of people and farm workers, all of whom believed that the festival was an illegal commercialization of archeological heritage.  Differences exist between those who believe that the festival is an exploitation rather than a preservation of tradition and who say that the festival itself damages the archeological site and the promoters, as opposed to those who applaud the festival as a tourist attraction and money-making proposition. The festival, despite its controversial nature, has persevered.

    In 2001, Parque Takilhsukut, a theme park approximately one kilometer outside El Tajín archeological site, opened in answer to opposition to the Cumbre.  Most Cumbre events were moved to that park; only a nightly sound and light show continues at the pyramid site.  Although the government intended the theme park to be a center of indigenous life and tradition, the only activity the day we were there was at the cocina de humo. Sra. Atzin and her group of cocineras tradicionales were cooking comida (the main meal of the day in Mexico) for themselves, but no group of students or guests was in the kitchen.  Sra. Atzin talked extensively to me about the Veracruz government's failure to continue funding and support for their efforts.  Until fairly recently, the cocina de humo offered many buzzing classes to school children and older people alike, including transportation from their towns to the theme park.  Today, the bankrupt Veracruz government has no funds to offer.

    In the pot are tamales pintos, a Totonaco specialty that wraps a mixture of fresh, light masa (corn dough) with newly harvested, tender black and white beans known as pintos ('painted') in hoja de plátano (banana leaves).  Las mujeres de humo treated us to the first two delicious pintos to come out of the pot.

  • Celebrating February 2: The Christ Child on Candlemas Day in Mexico

    For about a month prior to Christmas each year, the Niño Dios (baby Jesus) is for sale everywhere in Mexico.  Mexico Cooks! took this photograph in 2013 at the annual tianguis navideño (Christmas market) in front of the Mercado Medellín, Colonia Roma, Mexico City.  These Niños Dios range in size from just a few inches long to nearly the size of a two-year-old child.  They're sold wrapped in only a diaper.

    When does the Christmas season end in your family?  When I was a child, my parents packed the Christmas decorations away on January 1, New Year's Day.  Today, I like to enjoy the nacimientos (manger scenes), the Christmas lights, and the tree until the seventh or eighth of January, right after the Día de los Reyes Magos (the Feast of the Three Kings).  Some people think that date is scandalously late.  Other people, particularly my many Mexican friends, think that date is scandalously early.  Christmas in Mexico isn't over until February 2, el Día de la Candelaria (Candlemas Day), also known as the Feast of the Presentation.

    Although Mexico's 21st century Christmas celebration often includes Santa Claus and a Christmas tree, the main focus of a home-style Christmas continues to be the nacimiento and the Christian Christmas story.  A family's nacimiento may well contain hundreds–even thousands–of figures, but all nacimientos have as their heart and soul the Holy Family (the Virgin Mary, St. Joseph, and the baby Jesus).  This centerpiece of the nacimiento is known as el Misterio (the Mystery).  The nacimiento is set up early–mine is always out at the very beginning of December–but the Niño Dios does not make his appearance until the night of December 24, when he is sung to and placed in the manger.

    Between December 24, when he is tenderly rocked to sleep and laid in the manger, and February 2, the Niño Dios rests happily in the bosom of his family.  As living members of his family, we are charged with his care.  As February approaches, a certain excitement begins to bubble to the surface.  The Niño Dios needs new clothing!  How shall we dress him this year?

    According to Christian teaching, the Virgin Mary and St. Joseph took the baby Jesus to the synagogue 40 days after his birth to introduce him in the temple–hence February 2 is also known as the Feast of the Presentation. What happy, proud mother would wrap her newborn in just any old thing to take him to church for the first time?  I suspect that this brand new holy child was dressed as much to the nines as his parents could afford.

    Every February 2, churches are packed with men, women, and families carrying their Niños Dios to church in his new clothes, ready to be blessed, lulled to sleep with a sweet lullaby, and tucked gently away till next year.

    The Niño Dios as el Santo Niño Doctor de los Enfermos (the Holy Child, doctor of the sick).  He has his stethoscope, his uniform, and his doctor's bag.  This traditionally dressed baby Jesus has origins in mid-20th century in the city of Puebla.

    Every year new and different clothing for the Niño Dios comes to market.  A few years ago, the latest fashions were those of the Archangels–in this case, the Archangel Gabriel.

    The Niño Dios dressed as Peruvian San Martín de Porres, the patron saint of racially mixed people and all those seeking interracial harmony.  He is always portrayed holding a broom.

    The ceremony of removing the baby Jesus from the nacimiento is called the levantamiento (lifting up).  In a family ceremony, the baby is raised from his manger, gently dusted off, and dressed in his new finery.  Some families sing:

    QUIERES QUE TE QUITE MI BIEN DE LAS PAJAS, (Do you want me to brush off all the straw, my beloved)
    QUIERES QUE TE ADOREN TODOS LOS PASTORES, (Do you want all the shepherds to adore you?)
    QUIERES QUE TE COJA EN MIS BRAZOS Y CANTE (Do you want me to hold you in my arms and sing)
    GLORIA A DIOS EN LAS ALTURAS.  (Glory to God on high).

    One of the most popular 'looks' for the Niño Dios in Mexico City is that of San Judas Tadeo, the patron saint of impossible causes.  He is always dressed in green, white, and gold and has a flame coming from his head.

    This lovely video from Carapan, Michoacán shows both the gravity and the joy (and the confetti!) with which a Niño Dios is carried to the parish church.

    Carefully, carefully carry the Niño Dios to the parish church, where the priest will bless him and his new clothing, along with you and your family.  After Mass, take the baby Jesus home and put him safely to rest till next year's Christmas season.  Sweet dreams of his next outfit will fill your own head as you sleep that night.

  • Looking Back Through 2016, Part Two :: Una Mirada Hacia Atras 2016, Segunda Parte

    Ceremonial tortillas from the state of Guanajuato, made only in the Otomí communities of that state as food for certain ritual occasions. These were served at Restaurante Azul Condesa during July 2016, when Guanajuato's cuisine was featured for the month at the restaurant. They became so deservedly popular that the restaurant has continued to offer them.  The tortillas, made of nixtamalized corn masa (dough), are shaped, pressed, and cooked on one side on a comal (griddle). They are then flipped and stamped with a hand-carved wooden stamp that has been dipped in muicle, a liquid vegetable dye made from a wild plant.

    In mid-July, it was my tremendous honor to host an evening in honor of Zarela Martínez (seated, center), who in 1987 opened Zarela, a Mexican restaurant that is credited as being a pioneer of regional Mexican cuisine in New York City.  She is the author of several wonderful cookbooks, including Food from My Heart: Cuisines of Mexico Remembered and Reimagined (1995) (nominated for Best International Cookbook of the Year, James Beard Foundation); The Food and Life of Oaxaca: Traditional Recipes from Mexico's Heart (1997); and Zarela's Veracruz (2001). Some of the guests surrounding Zarela are: (seated) Celia Marín Chiunti and Rosa María Villareal; (standing from left) Rafael Mier, Marisa Zannie, Pedro Luis de Aguinaga, Mexico Cooks!, and Sonia Ortiz.

    As a frequent visitor to a local tiradero (slang for flea market–literally, garbage dump), Mexico Cooks! has bought many wonderful old things for decorating the home place. This is not one of them.  In August, a friend asked me to photograph this tableau of a javalí (wild boar) and rattlesnake for her nephew, a fan of taxidermy. One can buy anything from a silver ring to–well, a stuffed javalí–at this flea market.

    I often go out looking for interesting graffiti, and almost always find something fun.  This cat face, stenciled onto a wall close to my home, looks very much like Risa, my tortoiseshell kitten.

    An event in Mexico City at the end of August brought several cocineras tradicionales (traditional cooks) to visit from Michoacán.  This woman spent most of the day pat-pat-patting truly hand-made tortillas to serve to the public along with home-style food.  The gentle rhythm of her hands against the masa (corn dough) coupled with the laughter of other cooks made me feel like I was home again in Michoacán.  Listen as she pats out the tortilla; imagine the smell of woodsmoke.  Both are still iconic to rural Mexico.

    This hard-working market bag advertises a butcher shop in Tehuacán, Puebla.  No recap of the year 2016 could be complete without at least one mention of the life-changing weekend I spent in this south-central part of Mexico.  Remember the Mexico Cooks! article about the cave where…well, re-read it here: Corn, An Ancient Gift from Mexico to Feed the World. Chills still run up the back of my neck when I think about gazing into this small hollow space, a shelter in the mountain.

    Early September took us to the Palacio de Bellas Artes (Fine Arts Palace) in downtown Mexico City.  The traditional music group Los Folkloristas celebrated its 50th anniversary here.  A good friend is a member of the group and made certain that another friend and I had great seats, a couple of levels below the glorious stained-glass dome.

    Sometimes a person can't help being ecstatic.  Meeting Laura Esquivel (author of the extraordinary and ground-breaking Like Water for Chocolate, among other wonderful books) near the end of September was a real highlight of my year.  She was part of the press conference for the MODO exhibition Del Plato a la Boca–the beautifully curated, kitchen-oriented show will be at the museum through February 2017. Don't miss it.

    Mid-October took me to Toluca, in the State of Mexico, to see the Cosmovitral.  The Cosmovitral is a beautiful stained glass-enclosed botanical garden.  The group Aztec Explorers, which organizes mostly day tours for people new to Mexico City or the surrounding area, invited me to come along to see the kind of work they do.  The tour company advertises primarily to people who live in or near Mexico City and want to make friends with others while enjoying an overview of sites they've heard about and want to see.  If this sounds like a day that suits your style, you'll enjoy the inexpensive tours that Lilia and Peter give.  By all means tell them Mexico Cooks! sent you.

    For November 2, Día de Los Muertos, Mexico Cooks! took a small group of tourists to that flea market I mentioned above–no taxidermy this time, though. Alfredo Vilchis Roque, who is proclaimed as "the Da Vinci of the market", built an altar for Day of the Dead 2016.  Click on any of the photographs for a larger view.  Sr. Vilchis, whose work has been exhibited at the Louvre and is sold at a Paris gallery (among others), was generous enough to point out several fascinating aspects to the altar.  Look, for example, just at knee level and in front of him: there's a tribute to Juan Gabriel, Mexico's world-famous singer and idol, who died on August 28, 2016.

    Evento 17-11-2016 Salvemos el Mai?z Palomero Mexicano 2
    November 17, 2016, marked the launch of a program called Salvemos el Maíz Palomero de México (Let's Save Mexican Popcorn).  Part of the project for the preservation of Mexico's native corns in general as well as for the preservation of the tortilla made of nixtamalized corn, the popcorn event was particularly designed to bring the near-extinction of Mexico's original corn to the attention of the press.  It was a tremendous success; even Aristegui Noticias, the foremost news in Mexico shown on CÑÑ (CNN in Spanish), picked up the story and broadcast it to the Spanish-speaking world.  You'll be reading a lot more about this multi-faceted project in the weeks and months to come, right here at Mexico Cooks!.

  • Do You Call It a Manger Scene? A Creche? In Mexico, It’s a Nacimiento.

    A Christmas tree may be the central focus of your home decoration during this joyous season of the Christian year.  In most parts of Mexico, though, the Christmas tree is a fairly recent import and the primary focus of the holiday is still on the nacimiento (manger scene, creche, or nativity scene).

    One of Mexico Cooks!' biggest delights every late November and early December is shopping for Christmas–not hunting for gifts, but rather on the lookout for new items to place in our nacimiento (manger scene).  Truth be told, we have five nacimientos–or maybe six–that come out each Christmas season, but only one of them keeps growing every year.

    The tiny figures in this nacimiento are made of clay; the choza (hut) is made of wood.  The shepherds and angels have distinctive faces; no two are alike.  One shepherd carries firewood, another a tray of pan dulce (sweet breads), a third has a little bird in his hands.  The tallest figures measure only three inches high.  According to la leyenda navideña (the Christmas legend), even the animals in the stable bowed down to worship the Niño Dios (Baby Jesus).

    The Niño Dios is not usually placed in the pesebre (manger) until the night of December 24.  The Niño Dios for the clay nacimiento above is just over an inch long and is portrayed sleeping on his stomach with his tiny knees drawn up under him, just like a real infant.  This entire nacimiento was made about 35 years ago in Tonalá, Jalisco, Mexico.

    Mexican households traditionally pass the figures for their nacimientos down through the family; the figures begin to look a little tattered after traveling from great-great-grandparents to several subsequent generations, but no one minds.  In fact, each figure holds loving family memories and is the precious repository of years of 'remember when?''.  No one cares that the Virgin Mary's gown is chipped around the hem or that St. Joseph is missing an arm; remembering how the years-ago newest baby, now 32 and with a baby of his own, teethed on the Virgin's dress or how a long-deceased visiting aunt's dog bit off St. Joseph's arm is cause for a family's nostalgic laughter.

    Nacimiento en vivo (living nativity scene), Lake Chapala, Jalisco, Mexico.  In 13th century Italy, St. Francis of Assisi was the first to be inspired to re-enact the birth of Christ.  The first nacimiento was presented with living creatures: the oxen, the donkey, and the Holy Family.  Even today in hundreds of Mexican communities, you'll see living manger scenes.

    Holy Family, 18th century Italy.  The first nativity figures, made of clay, were created in 15th century Naples and their use spread rapidly throughout Italy and Spain.  In Spain, the early figural groups were called 'Belenes' (Bethlehems).

    A few weeks before Christmas, my tiny nacimiento de plomo (manger scene with lead figures, none over four inches high) comes out of yearlong storage.  The wee village houses are made of cardboard and hand-painted; each has snow on its roof and a little tree in front.  You might well ask what the figures in the photo represent: Sr. San José (St. Joseph, who in Mexico always wears green and gold) leads the donkey carrying la Virgen María (the Virgin Mary) on their trek to Belén (Bethlehem).  We put these figures out earliest and move them a bit closer to Bethlehem every day.  This nacimiento is the one that grows each year; I have added many, many figures to the original few.  This year I expect the total number of figures to rise to well over 200.

    Detail of the lead figures in my ever-growing nacimiento.  To the left is a well (with doves) and a woman coming to draw water; to the right is an arriero (donkey-herder) giving his stubborn little donkey what-for.  No matter how many figures are included, the central figures in any nacimiento are the Holy Family (St. Joseph, the Virgin Mary, and the Baby Jesus).  In Mexico, those three are collectively known as el misterio (the mystery).

    A very small portion of one of the largest nacimientos on display in Mexico City.  It measures more than 700 square meters and includes thousands of figures.  They include everything you can think of and some things that would never occur to you: a butcher shop, a running stream and a waterfall, sleeping peasants, and washerwomen.  A nacimiento can include all of the important stories of the Bible, from Genesis to the Resurrection, as well as figures representing daily life–both today's life in Mexico and life at the time of Jesus's birth.  Photo courtesy El Universal.

    Papel roca (hand-painted paper for decorating a nacimiento), a choza (little hut), and two kinds of moss for sale in this booth at the Guadalajara tianguis navideño (Christmas market).  Over the course of years, Mexico Cooks! has purchased figures of a miniature pre-Hispanic loinclothed warrior, a tiny shoemaker working at his bench, a wee man sawing firewood, and a shepherd standing under a tree while holding a lamb. The shepherd's tree looks exactly like a stalk of broccoli and makes me smile each time I look at it. 

    Where in Mexico can you buy figures for your nacimiento?  Every city and town has a market where, for about a month between the end of November and the first week in January, a large number of vendors offer items especially for Christmas.  Some larger cities, like Mexico City, Guadalajara, Morelia, and others, offer several tianguis navideños (Christmas markets) where literally thousands of figures of every size are for sale.  A few years ago, we found a tiny figure of the seated Virgin Mary, one breast partially exposed as she nurses the Niño Dios, who lies nestled in her arms.  It's the only one like it that we have ever seen.

    This booth at a tianguis navideño in Guadalajara offers Niños Dios in every possible size, from tiny ones measuring less than three inches long to babies the size of a two-year-old child.  In Mexico City's Centro Histórico, Calle Talavera is an entire street devoted to shops specializing in clothing for your Niño Dios.  The nacimiento is traditionally displayed until February 2 (Candlemas Day), when the Niño Dios is gently taken out of the pesebre in a special ceremony called the levantamiento (raising).  The nacimiento is then carefully stored away until the following December.

    Nacimiento (Villagers)
    At another tianguis navideño, an assortment of clay figures for your nacimiento: villagers, chickens, and vendors.  Size and scale don't matter: you'll find crocodiles the size of a soft drink can and elephants no bigger than your little finger.  Both will work equally well in your nacimiento.

    Each traditional figure in a nacimiento is symbolic of a particular value.  For example, the choza (the little hut) represents humility and simplicity.  Moss represents humility–it's something that everyone steps on.  The donkey represents the most humble animal in all creation, chosen to carry the pregnant Virgin Mary.  The star of Bethlehem represents renewal and unending light.

  • The Many Images of Our Lady of Guadalupe :: Nuestra Señora de Guadalupe en Imágenes

    The actual tilma (cape-like garment made of woven maguey cactus fiber) worn by San Juan Diego in December 1531.  The image is imprinted on the fabric; no science has been able to determine the source of the image.  The framed tilma hangs over the main altar at the Basílica de Nuestra Señora de Guadalupe, Mexico City.

    Listen as this group sings La Guadalupana, one of the most popular of Mexico's many traditional songs honoring Our Lady of Guadalupe.  The lyrics tell the story of her apparition to Juan Diego on the now-Mexico City hill called Tepeyac, and also emphasize the honor felt by Mexicans that she appeared here.

    The annual feast of Nuestra Señora de Guadalupe (Our Lady of Guadalupe) falls on December 12–in 2016, that's this coming Monday.  Nuestra Señora de Guadalupe is Mexico's patron saint, and her image adorns churches and altars, house facades and interiors, taxis, private cars, and buses, bull rings and gambling dens, restaurants and houses of ill repute. The shrine of Our Lady of Guadalupe, la Basílica, is a place of extraordinary vitality and celebration. On major festival days such as the anniversary of the apparition on December 12th, the atmosphere of devotion created by several million pilgrims is truly electrifying.  Yes, several million go to "echarle una visita a la Morenita" (pay a visit to the little brown virgin) during the 24 hours of her feast day.  On ordinary days, Masses are offered nearly every hour to the assembled faithful.

    The enormous Basílica of Nuestra Señora de Guadalupe in Mexico City is the second most visited pilgrimage site in the Western Hemisphere–second only to the Vatican. Its location, on the hill of Tepeyac, was a place of great sanctity long before the arrival of Christianity in the New World. In pre-Hispanic times, Tepeyac had been crowned with a temple dedicated to an earth and fertility goddess called Tonantzin, the Mother of the Gods. Tonantzin was a virgin goddess associated with the moon, like Our Lady of Guadalupe who usurped her shrine.

    There's a saying in Mexico: "No todos somos católicos, pero todos somos guadalupanos."  (We may not all be Catholics, but we are all devoted to Our Lady of Guadalupe.)

    Our Lady of Guadalupe, hand embroidered on silk with pearlized tiny beads, roses, and sequins.  Her face and hands, and the cherub at her feet, are hand-painted celluloid.  This piece was originally the ceremonial capote de paseo (shoulder piece) of a bullfighter's traje de luces (suit of lights).  It is the vestige of an 18th century long cape worn during the bullfighter's promenade into the ring.  When worn, this curved item fit over the bullfighter's left shoulder as a sort of epaulet.  This particular piece was sewn into an inverted cone for display.

  • The Spiritual Component of the Day/Night of the Dead in Mexico :: La Parte Espiritual del Día y Noche de Muertos en México

    What is death?  We know its first symptoms: the heart stops pumping, breath and brain activity stop. We know death's look and feel: a still, cold body from which the spirit has fled.  The orphan and widow know death's sorrow, the priest knows the liturgy of the departed and the prayers to assuage the pain of those left to mourn. But in most English-speaking countries, death and the living are not friends.  We the living look away from our mortality, we talk of the terminally ill in terms of 'if anything happens', not 'when she dies'.  We hang the crepe, we cover the mirrors, we say the beads, and some of us fling ourselves sobbing upon the carefully disguised casket as it is lowered into the Astroturf-lined grave.

    Octavio Paz, Mexico City's Nobel Laureate poet and essayist who died in 1998, is famously quoted as saying, "In New York, Paris, and London, the word death is never mentioned, because it burns the lips."

    In Mexico, on the contrary, every day is a dance with death.  Death is a woman who has a numerous affectionate and humorous nicknames: la Huesuda (the bony woman), la Seria (the serious woman), la Novia Fiel (the faithful bride), la Igualadora (the equalizer), la Dientona (the toothy woman), la Pelona (the bald woman), la Patrona (the boss lady), and a hundred more.  She's always here, just around the next corner or maybe right over there, behind that pillar.  She waits with patience, until later today or until twelve o'clock next Thursday, or until sometime next year–but when it's your time to go, she's right there, ready to dance away with you at her side.

    In Mexico, death is also in the midst of life.  We see our dead, alive as you and me, each November, when we wait at our cemeteries for those who have gone before to come home, if only for a night. That, in a nutshell, is Noche de Muertos: the Night of the Dead.

    Over the course of the last 30-plus years, Mexico Cooks! has been to countless Noche de Muertos events, but none as mystical, as spiritual, or as profoundly magical as that of 2013.  Invited to accompany a very small group on a private tour in Michoacán, I looked forward to spending three days enjoying the company of old and new friends. I did all that, plus I came away with an extraordinarily privileged view of life and death.

    A magnificent Purépecha ofrenda (in this case, a home altar) in the village of Santa Fe de la Laguna, Michoacán. This detailed and lovely ofrenda was created to the memory of the family's maiden aunt, who died at 74. Because she had never married, even at her advanced age she was considered to be an angelito (little angel)–like an innocent child–and her spirit was called back home to the family on November 1, the day of the angelitos.  Be sure to click on the photo to see the details of the altar. Fruits, breads, incense, salt, flowers, colors, and candles have particular symbolism and are necessary parts of the ofrenda.

Several local people told Mexico Cooks! that the fruit piled on the altar tasted different from fruit from the same source that had not been used for the ofrenda. "Compramos por ejemplo plátanos y pusimos unos en el altar y otros en la cocina para comer. Ya para el día siguiente, los del altar pierden su sabor, no saben a nada," they said.  'We bought bananas, for example, and we put some on the altar and the rest in the kitchen to eat.  The next day, the ones in the kitchen were fine, but the ones from the altar had no taste at all.'

    Preparing a family member's ofrenda (altar) in the camposanto in the village of Arócutin, Michoacán. The camposanto–literally, holy ground–is a cemetery contained within the walls of a churchyard.  The candles used in this area of Michoacán are hand made in Ihuatzio and Santa Fé de la Laguna.

    Come with me along the unlit road that skirts the Lago de Pátzcuaro: Lake Pátzcuaro.  It's chilly and the roadside weeds are damp with earlier rain, but for the moment the sky has cleared and filled with stars.  Up the hill on the right and down the slope leading left toward the lake are tiny villages, dark but for the glow of tall candles lit one by one in the cemeteries.  Tonight is November 1, the night silent souls wend their way home from Mictlán, the land beyond life.

    At the grave: candlelight to illuminate the soul's way, cempazúchitl (deeply orange marigolds) for their distinctive fragrance required to open the path back home, smoldering copal (frankincense) to cleanse the earth and air of any remnants of evil, covered baskets of the deceased's favorite foods.  And a low painted chair, where the living can rest through the night.

    Noche de Muertos is not a costume party, although you may see it portrayed as such in the press.  It is not a drunken brawl, although certain towns appear to welcome that sort of blast-of-banda-music reventón (big blow-out).  It is not a tourist event, though strangers are certainly welcomed to these cemeteries. Noche de Muertos is a celebration of the spirit's life over the body's death, a festival of remembrance, a solemn passover.  Years ago, in an interview published in the New York Times, Mexico Cooks! said, "Noche de Muertos is about mutual nostalgia.  The living remember the dead, and the dead remember the taste of home."

    One by one, grave by grave, golden cempazúchtles give shape to rock-bound tombs and long candles give light to what was a dark and lonely place, transforming the cemetery into a glowing garden.  How could a soul resist this setting in its honor?

  • The Catrina, Mexico’s Iconic Legacy from José Guadalupe Posada

    José Guadalupe Posada, born in early 1852 in the state of Aguascalientes, Mexico, developed his skill as an artist into a career as the foremost political cartoonist of his era, regularly skewering the high and mighty of late 19th century Mexico with his engravings.  His portrait (above), engraved by mid-20th century engraver Leopoldo Méndez, is a classic.

    Posada's satirical efforts started when he worked as a teenage apprentice in Aguascalientes.  His boss, José Trinidad Pedroza, assigned him the job of creating a finger-pointing cartoon depicting the misdeeds of a local politician.  His characterization was so successful that it created a tremendous hullabaloo in Aguascalientes; both Posada and Pedroza had to leave town in a hurry to avoid the politico's wrath.  When the tumult calmed down, the two printers returned to their work of exposing nefarious political goings-on.

    When Pedroza's Aguascalientes workplace was destroyed by a flood in 1888, Posada moved to Mexico City to open his own workshop.  After the move to the capital, Posada began publishing and distributing frequent volantes (flyers).  He used the medium to continue to puncture the egos and expose the foibles and serious crimes of government and social figures of the day.  During a time when many in Mexico were illiterate, the message of political cartoons could be easily understood even without reading the articles.  Many credit Posada with raising the political and social consciousness of the peón (common laborer), exposing social injustice at a time when most at that level were blind to it.

    Posada's first published fashionably-hatted calavera (skull).  The cartoon is titled, "Big Sale of Grinning Skulls".  Over the course of the rest of his career, it is estimated that the prolific Posada published as many as 20,000 political volantes, at a penny apiece, including many thousands that were illustrated by calaveras.

    What was Posada's purpose in utilizing a skeleton–albeit a well-dressed skeleton–to illustrate his articles?  Mexico's president/dictator at the time, Porfirio Díaz, appreciated and aped all things French.  During his rule, known as the Porfiriato, Mexican government officials and high society alike dressed in the French mode, expressing what was known then and is known now as malinchismo: over-valuing foreign imports over Mexico's national products. The Frenchified calavera engraved by Posada is offered as a satirical portrait of those Mexican natives who, Posada felt, were aspiring to adopt European aristocratic traditions in Mexico's pre-revolutionary era. The irony of Posada’s drawing—a fabulously over-dressed skeleton—is that no matter what we’re wearing, we all end as bones.

    In the fairly recent past, Posada's politicized calavera became known as la catrina, a figure now closely related to Mexico's celebration of Día de los Muertos (Day of the Dead).  Renowned Michoacán-based painter and sculptor Juan Torres CalderónMexico Cooks! good friend, was the first to present Posada's catrina vision in clay.  In 1982, his wife, Velia Canals, began production of Maestro Torres' catrina designs.  Their workshop in Capula, Michoacán, is open for sales to the public.

    The Mexican word catrina–the word now used for any representation of Posada's original French-attired calavera–simply means a woman who is dressed to the nines.  Her male counterpart is known as a catrín—a handsome man, usually dressed in elegant male attire. Together, the couple are catrines.  Even today, if you go out to a formal event, your neighbor (seeing you leave the house) might well say, “Uff, qué catrina!” Unless you’re a man, of course, in which case the neighbor would say, “Qué catrín!”.

    Some of the many Día de los Muertos figures displayed at the fabulous bakery Hornos de Los Ortíz, in Morelia, Michoacán.  The owner makes these gorgeous figures out of bread dough!  If you happen to be in Morelia in the next few weeks, DO NOT MISS this bakery and its annual display.  The owners, in a typical Mexican play on words, call the diorama a pan-teón: bread cemetery.

    During the 2015 Noche de los Muertos events in Morelia's historic center, this young woman dressed in a skirt and hat made of totomoxtle (dried corn husks)–the husks normally used for making tamales.  Her mother made her outfit and painted her face.

    During the last few years, many Mexican children and adults have begun to paint their faces for Día (and Noche) de Muertos.  The little girl in the chair lives in Opopeo, Michoacán, a small town not far from Morelia.  In the town square's bandstand, young people were designing a special face for each child who wanted one.

    Posada's century-old political calavera has evolved into one of Mexico's most beloved icons, the catrina.  When your friends ask you about her, be sure that they know the history behind this beautiful creature.  She's more than just a pretty face.

  • El Niño Dios, the Christ Child on the Feast of La Candelaria: Candlemas Day in Mexico

    For about a month prior to Christmas each year, the Niño Dios (baby Jesus) is for sale everywhere in Mexico.  Mexico Cooks! took this photograph in 2013 at the annual tianguis navideño (Christmas market) in front of the Mercado Medellín, Colonia Roma, Mexico City.  These Niños Dios range in size from just a few inches long to nearly the size of a two-year-old child.  They're sold wrapped in only a diaper.

    When does the Christmas season end in your family?  When I was a child, my parents packed the Christmas decorations away on January 1, New Year's Day.  Today, I like to enjoy the nacimientos (manger scenes), the Christmas lights, and the tree until the seventh or eighth of January, right after the Día de los Reyes Magos (the Feast of the Three Kings).  Some people think that date is scandalously late.  Other people, particularly my many Mexican friends, think that date is scandalously early.  Christmas in Mexico isn't over until February 2, el Día de la Candelaria (Candlemas Day), also known as the Feast of the Presentation.

    Although Mexico's 21st century Christmas celebration often includes Santa Claus and a Christmas tree, the main focus of a home-style Christmas continues to be the nacimiento and the Christian Christmas story.  A family's nacimiento may well contain hundreds–even thousands–of figures, but all nacimientos have as their heart and soul the Holy Family (the Virgin Mary, St. Joseph, and the baby Jesus).  This centerpiece of the nacimiento is known as el Misterio (the Mystery).  The nacimiento is set up early–in 2013, mine was out at the very beginning of December–but the Niño Dios does not make his appearance until the night of December 24, when he is sung to and placed in the manger.

    Between December 24, when he is tenderly rocked to sleep and laid in the manger, and February 2, the Niño Dios rests happily in the bosom of his family.  As living members of his family, we are charged with his care.  As February approaches, a certain excitement begins to bubble to the surface.  The Niño Dios needs new clothing!  How shall we dress him this year?

    According to Christian teaching, the Virgin Mary and St. Joseph took the baby Jesus to the synagogue 40 days after his birth to introduce him in the temple–hence February 2 is also known as the Feast of the Presentation. What happy, proud mother would wrap her newborn in just any old thing to take him to church for the first time?  I suspect that this brand new holy child was dressed as much to the nines as his parents could afford.

    Every February 2, churches are packed with men, women, and families carrying their Niños Dios to church in his new clothes, ready to be blessed, lulled to sleep with a sweet lullaby, and tucked gently away till next year.

    The Niño Dios as el Santo Niño Doctor de los Enfermos (the Holy Child, doctor of the sick).  He has his stethoscope, his uniform, and his doctor's bag.  This traditionally dressed baby Jesus has origins in mid-20th century in the city of Puebla.

    Every year new and different clothing for the Niño Dios comes to market.  In 2011, the latest fashions were those of the Archangels–in this case, the Archangel Gabriel.

    The Niño Dios dressed as Peruvian San Martín de Porres, the patron saint of racially mixed people and all those seeking interracial harmony.  He is always portrayed holding a broom.

    The ceremony of removing the baby Jesus from the nacimiento is called the levantamiento (lifting up).  In a family ceremony, the baby is raised from his manger, gently dusted off, and dressed in his new finery.  Some families sing:

    QUIERES QUE TE QUITE MI BIEN DE LAS PAJAS, (Do you want me to brush off all the straw, my beloved)
    QUIERES QUE TE ADOREN TODOS LOS PASTORES, (Do you want all the shepherds to adore you?)

    One of the most popular 'looks' for the Niño Dios in Mexico City is that of San Judas Tadeo, the patron saint of impossible causes.  He is always dressed in green, white, and gold and has a flame coming from his head.

    This lovely video from Carapan, Michoacán shows both the gravity and the joy (and the confetti!) with which a Niño Dios is carried to the parish church.

    Carefully, carefully carry the Niño Dios to the parish church, where the priest will bless him and his new clothing, along with you and your family.  After Mass, take the baby Jesus home and put him safely to rest till next year's Christmas season.  Sweet dreams of his next outfit will fill your own head as you sleep that night.

  • Kitchen and Countryside Mexico 2015: A Recap of Some of Our Favorite Things

    In Mexico, once we've rung in the New Year, the next party is ordinarily for Los Reyes Magos–the Three Kings–on January 6, their feast day. The photo above shows the traditional Mexican Rosca de Reyes (Kings' Bread) that is eaten (accompanied by a cup or two of delicious Mexican hot chocolate) at just about every table in the country on that day.  The sweet, rich dough is rolled into an oval or a ring and then decorated with sugar, ates of various flavors (similar to fruit leather), nuts, and then baked.  So what's the big deal?  Inside the dough, bakers hide a tiny figure of the Niño Dios (Baby Jesus). There's great hilarity as the rosca is sliced: who will get the muñeco (little figure)? The person who finds the baby in his or her slice is required to throw another party on Candelaria (Candlemas Day), February 2: tamales and atole (a thick, sweet corn-based drink) for everyone!  February 2 is the official end of the Christmas season in Mexico.

    February took Mexico Cooks! to Oaxaca, invited to the wedding of dear friends Diana Miller and Adán Paredes. The wedding festivities lasted three days–we don't do things by half here!–and the guests still sigh and smile when we think or talk about the event's joyous beauty. The civil ceremony was a marvelous cocktail party and opportunity to socialize with everyone; the morning of the spiritual ceremony, Mexico Cooks! gave two Oaxaca market tours to guests from northern Mexico. Later that afternoon, a traditional Zapotec chamán and his wife presided over the spiritual ceremony (followed by all-night dining and dancing!), and the third day we toured with the wedding party to a market south of Oaxaca city and then shared a joyous meal at the ever-marvelous restaurant La Teca.  It was only February, but we knew that no other event on the 2015 calendar would come close to matching this thrilling weekend.

    March found Mexico Cooks! at Pujol, Enrique Olvera's flagship restaurant in Mexico City.  Invited by a serious lover of food in all its aspects, we were not disappointed. In fact, we were overwhelmed by everything about our meal: the room, the service, and most of all, the food. There was no room at all for improvement: everything we experienced was perfect.

    In April, we were back at Jing Teng, our favorite Chinese restaurant in all of Mexico.  Yes: not just Mexico City, but the entire country.  The photo shows perfectly cooked gai lan (Chinese broccoli) with garlic, one of the you-absolutely-gotta-get-it dishes on the menu.

    Morelia en Boca, an international food and wine festival, takes place in Morelia, Michoacán on the last weekend of each May, and we were there.  This fish is a pejelagarto, an enormous fish found primarily in the Mexican state of Tabasco.  Look at its needle-teeth!  The pejelagarto has no scales; its skin is like a suit of armor.  This section of the fish was about one-third of its length; it measured between three and four feet long.  World-acclaimed chef Aquiles Chávez brought this giant animal from Tabasco and cooked it (turning it with a broomstick rammed down its throat, all the way to the other end) over an open fire on the festival stage!  The demonstration conference also included Rosalba Morales Bartolo of San Jerónimo Purenchécuaro, Michoacán, who prepared her famously delicious charales (fish as tiny as the pejelagarto is huge) in the style her grandmother taught her.  This was without doubt the single best food conference I have ever attended; the skill, knowledge, and sense of humor on the part of both participants combined to receive a standing ovation at conference end.

    San Hipo?lito Muchacho Cholo
    An old friend, visiting me in Mexico City, was as interested as I in visiting the church of San Hipólito, in Mexico City's Centro Histórico.  The 28th of each month, Masses are offered all day in honor of San Judas Tadeo. My friend and I were there on July 28, among a crowd that numbered in the thousands.  On San Judas Tadeo's actual October feast day, the crowds number in the hundreds of thousands.

    The Primer Encuentro Nacional de Cocineras Tradicionales (first national reunion of traditional cooks) in Morelia, Michoacán, in August 2015 brought together home cooks from 25 of the 31 Mexican states–plus the Federal District.  Many of us who attended are long-time friends who see one another only occasionally. This memorable photo includes (L to R): Celia Florián from Oaxaca, Alma Cervantes Cota from Sinaloa and currently living in Mexico City, Susana Trilling of Seasons of My Heart cooking school in Oaxaca, Mexico Cooks!, and Calletana Nambo from Erongarícuaro, Michoacán.  We spent hours around that table, eating, drinking mezcal, and gossiping catching up with one another.

    The rainy season in central Mexico begins in mid-May and lasts until the beginning of November.  During that time, wild mushrooms spring up in Mexico's oak and pine forests, especially in the more mountainous states.  This vendor, who was too busy selling on this September day to tell me her name, brought mushrooms that she and her family foraged to sell in Mexico City's markets.  Fresh chanterelles, boletes, and morels make up most of her wares.  I bought a pound of fresh morels (approximately 80 pesos, or $4.50USD), gave half to my neighbor, and made a pasta sauce of the rest.  Click on the photo to enlarge it and better see the mushrooms.

    In late October we were in Quiroga, Michoacán, for carnitas.  These, from a street stand under the traffic light downtown, are in my opinion the best carnitas in town.  The vendor gave us this taco as a taste–just to see if we'd like what he was selling.  Yes, it was exactly as enormous as it looks. And yes, we bought another half-kilo of carnitas to share among our group.  The carnitas come with fresh tortillas, limones, and several kinds of salsas.  Soft drinks and aguas frescas are available at a booth near your communal-seating outdoor table, and someone will come by your table to ask if you want to buy a cupful of guacamole.  Yes, you do.

    October gets two mentions!  Suzanne Cope and her family came to Mexico City in the early Fall to tour with Mexico Cooks!.  This sweet toddler is her son Rocco, who fell in love with a pig head at one of Mexico City's best markets. Who knows, you might fall in love with a pig head too!

    A friend from Washington, D.C., ordered this bowl of crema de flor de calabaza at Restaurante Azul/Histórico in Mexico City in mid-November.  She graciously let me taste it.  This cream soup was without question one of the best I've ever tasted.  Our waiter told us that each bowl contains 18 squash flowers plus the one used as decoration.  Did you know that only male squash blossoms are harvested for food? The female blossoms are left on the vines to allow squash to form.

    My school put on a Christmas pageant when I was in the third grade, back in the days before the law specified generic holiday greetings.  Remember way back then, how Joey and Jimmy, Ralphie and Bobby, were the shepherds in their father's striped terrycloth bathrobes, the sashes tied three or four times around their waists?  Chuck got to be Joseph and that prissy little Linda Beth got to dress in blue and white as the Virgin Mary when everybody KNEW it should have been you up there nuzzling the Baby Jesus.  Here's a sweet little reminder:

    In Mexico, a Christmas pageant, like almost everything, is different from Christmas plays North of the Border.  Called a pastorela, the Mexican Christmas play is part very naughty topical comedy, part traditional drama, part Sunday school lesson, and 100% morality play.  Pastorela means pastoral, or a play that takes place in the countryside, and concerns the activities of pastores, or shepherds. First introduced to Mexico by Franciscan missionaries in the 1500's, pastorelas continued to grow in favor here.  Today, the plays are one of the most popular Christmastime entertainments.  The theme portrays the eternal conflict between good and evil. The plot revolves around the pilgrimage of the shepherds to Bethlehem to see the newborn Niño Dios.

    The devil is not ordinarily associated with Christmas. In Mexico, however, Satan plays a very solid role in the holiday festivities. He is actually the star!  Lucifer works all his worst wiles to detour the shepherds away from their destination.  Costumed as various alluring personages, Satan and his apprentice devils do their best to trick the shepherds into abandoning their journey to redemption.  At the end, Satan is tricked, good triumphs, the shepherds meet the Holy Family, and all is well.

    Several years ago, Mexico Cooks! spent a week or so looking for a pastorela to be presented at a time we could attend.  One day I noticed an article in the newspaper about a pastorela that was being offered that very night in Cuitzeo, a small town about an hour north of Morelia.  The title of the play (El Ermitaño.com: The Hermit.com) was intriguing, the photo of the performers in costume looked exciting, and the timing was right. I called my friend Bunny, who jumped at the chance to accompany me to the evening performance, and we were off to Cuitzeo.

    Cuitzeo reached the status of Mexican Pueblo Mágico, the third in Michoacán, in 2006.   The requirements for the Pueblo Mágico designation are:

    • a town or city rich in tradition
    • located in an area of high interest to tourists
    • that it have a strong history
    • that it have ready access from major highways

    You'll see in this video that Cuitzeo easily meets Pueblo Mágico criteria.

    Our pastorela took place outside, on the grounds of the Ex-Convento de Santa María Magdalena, a 16th Century Augustinian convent.  We stopped first in the church to see the Christmas decorations.

    Cuitzeo's 17th Century Virgin Mary wears a charming straw sombrero, carries a lace-trimmed basket, and rides a donkey as she and Joseph travel to Bethlehem.

    The presentation of El Ermitaño.com, written by the wonderful contemporary Mexican playwright Miguel Sabido, was sponsored by Adopt a Work of Art, the Michoacán Secretary of Tourism, the Cuitzeo city government, the National Institute of Anthropology and History, and the newspaper La Voz de Michoacán.  We discovered that this pastorela was not a simple country town's Christmas caprice.  It is a sophisticated, professional play of great good humor.

    According to Miguel Sabido, "The culture which distinguishes Mexico is both vast and rich, but it's composed of more than our country's admirable buildings.  Mexico has its greatest patrimony in its popular rituals, and its recipes like the pinole cookies that are only made here in this region, and the pastorelas.  These are Mexico's legacies and we must make a commitment to spread her traditions."

    El ermitaño (the hermit), portrayed as a post-elderly (think 200 years old) fellow, leads the shepherds (in this case, indigenous Purépecha from Michoacán) on the long trip to Bethlehem.  The Archangel Michael warns them that they'll see the devil in the disguise of famous and fascinating people.  When Satan begins to tempt the simple shepherds, they easily fall into his traps.

    Famously rival Mexican soccer teams, a drunken debauch complete with Caribbean dancers in flounced skirts and turbans, and an angelic choir are all devils in disguise.  In every encounter, Archangel Michael has to intervene to prod the shepherds on their way.  Topical jokes ran wild, references to the famous and the infamous flew, and we loved it all.

    Finally, Bethlehem!  The Virgin Mary holds the Niño Dios as St. Joseph and the shepherds look on.

    The pastorela story was typically good conquers evil, but what a production!  Acted, danced, and sung by professionals, the morality play kept the crowd (packed into bleachers on two sides of the open stage) laughing, clapping, booing and hissing, and singing along with Mexico's treasured and iconic villancicos (Christmas carols).

    Listen to this lovely version of Los Peces en el Río.  Can you hear the lyric 'la Virgen lava pañales'?  It means 'the Virgin is washing diapers'!
