  • Bazar Sábado (Saturday Arts and Crafts Market) in San Ángel, Mexico City

    Sun-and-shade dappled Plaza San Jacinto, Colonia San Ángel, in the southern part of Mexico City, hosts Bazar Sábado.  Open only on Saturdays, the hours are 10:00AM until 7:00PM.

    So many people who tour with me want to shop for high-quality small items to take home as souvenirs or as gifts for relatives and friends.  The only place to go?  Bazar Sábado, the huge artisans' market held every week in gorgeous Colonia San Ángel in the southern sector of Mexico City.  The market includes both indoor and outdoor shops and booths.  What's to be had?  Just about anything!

    These tenangos (hand-embroidered textiles) are made in the state of Guerrero.  We saw full-size table cloths, napkins, table runners, and place mats. We bought a dozen or two fabric coasters hand-embroidered with birds, fish, and flowers.

    Crowds at Bazar Sábado tend to be large and shoppers are fairly aggressive.  Lots of tourists go: you'll hear Japanese, French, English, German, and a slew of other languages on the pathways of Plaza San Jacinto.  Be prepared to spend a little more money than you might in some other markets, but the atmosphere and the enormous selection of goods will give you great stories to tell back home.  Bazar Sábado is so well worth attending!

    While you're at Bazar Sábado, do go into Museo Casa Risco–at Plaza Jacinto #5–to see this glorious fountain.  It's entirely made of old dish ware and shells and fills one entire wall.  The building is off the beaten tourist path and definitely worth a look.  The museum also has both permanent and temporary exhibits that you'll enjoy.

  • Matatlán and Teotitlán del Valle, Oaxaca :: Mezcal and Traditional Cooking on the Road Home

    The Ilegal mezcal palenque (in a big stretch of translation, it's a mezcal distillery) is right on the road between Tlacolula and Teotitlán del Valle, in the little town which is arguably the mezcal capital of Oaxaca: Santiago de Matatlán.  The animal's job is to keep that stone wheel moving over wood-fire roasted maguey fibers, crushing them to prepare them for the fermentation and subsequent distillation process.

    The first week of May, 2018, Chef Silvana Salcido Esparza (Barrio Cafe Phoenix) and I were on the last leg of our Oaxaca trip, driving north from the Isthmus of Tehuantepec to Oaxaca City, when we saw a sign on the side of the road for ILEGAL (in Spanish 'illegal' has just one 'L') mezcal.  She braked and swerved into the parking lot: "I can't believe we found this!  It's one of the best mezcales that we serve at the Cafe!"  We spent about an hour, fascinated, talking with an Ilegal mezcalero about its production.

    From the Ilegal building's porch, I took this photo of the company's espadín maguey cactus fields.  Maguey grew as far as the eye could see.  This maguey is cultivated, not wild, and each plant takes between seven and ten years to mature enough to harvest.  Ilegal's joven (literally 'young', it means un-aged) mezcal gives you full-bodied espadín agave flavor. Barely smokey, its gently lemony flavors leave a slightly peppery sensation on your palate.  Ilegal also produces a reposado (briefly aged) mezcal as well as an añejo (longer aged) mezcal. 

    Founded in approximately 2002-2003 by an American expatriate, John Brexer, in just 15 years the Ilegal brand has become one of the best-quality mezcales from Oaxaca.  Because our time was so short at the palenque, we had little time to talk at depth with the producer.  Click on this link to read the full story of the brand: ILEGAL MEZCAL.   Nonetheless, we took a lot of pictures and it's fun to share them with you here.

    After our relámpago (lightning strike–i.e., really quick) stop at Ilegal, we headed for our much anticipated time prior to Oaxaca's airport: my dear friends Carina Santiago Bautista and her husband, Pedro Montaño, both soon to be equally dear to chef Silvana, had invited us to go to Tierra Antigua, their restaurant and gallery in Teotitlán del Valle, for a private comida with them.  Carina is a celebrated cocinera tradicional, and Pedro is a prize-winning Zapotec master weaver.  Silvana and I had been looking forward for days to being with them.

    Carina and Pedro and their family have been working for years to build the complex of restaurant, gallery, and bungalows for visitors.  The installations are beautiful; prior to our meal, Carina gave Silvana and me a tour of their beautifully designed and constructed buildings.  The interiors are modern and charming, the outdoor kitchen is rustic and traditional and designed for cooking classes.  And the restaurant/gallery!  Every wall shows off Pedro's extraordinary textiles (primarily wool rugs and wall hangings), all of which are for sale.  Their talented son, Diego Montaño, is also a weaver and is represented in the gallery.  His weaving incorporates whimsy and beauty into his designs.

    This small rug/wall hanging, woven by young Diego Montaño, represents the symbolism and traditions of the milpa, the ancient farming system of Mexico which is still used today.  Click on the link for information about that.  Chef Silvana bought this marvelous weaving for her home.

    The completely delightful Carina Santiago in her outdoor kitchen, standing at the stove.  Those are clay comales (comparable to griddles) coated with cal, the white substance on each comal's surface.   It's put there to make the comal non-stick!  If you're thinking of going to Oaxaca, schedule a cooking class with her.  She is fluently bilingual (Spanish/English) and will teach you Zapotec food preparation methods and flavors that go back hundreds of years.

    First thing at the table: home-made Oaxaca-style blue corn tortillas and salsa verde cruda–raw green salsa.  This salsa is so bright, so vibrant in one's mouth, and so wonderfully delicious that it awakened our palates for the rest of our meal to come.  Carina and her assistants prepare dried corn in the evening for grinding into masa (dough) the following day.

    What's on the plate?  Hoja santa leaf, with its light anise flavor, and quesillo (Oaxaca cheese), melted together with toasted chapulines (limón and chile-flavored grasshoppers).  A squeeze of limón and wow!

    Mole negro (black mole), the king of Oaxaca's moles.  Prepared with more than 30 ingredients, the intense flavors of this dish become more complex and more developed as one continues eating it.  The component that gives mole negro on of its most distinctive tastes is dried and reconstituted chile chilhuacle negro, a rare Oaxacan chile.

  • Juchitán, Capital of the Istmo of Tehuantepec

    Typical public transportation in Juchitán de Zaragoza (also known as Juchitán de las Mujeres).  These three-wheeled vehicles, some covered like this one and some open to the air, buzzed around everywhere in the city, taking people wherever they needed to go.

    Our last day in the Istmo, chef Silvana hired a mototaxi driver to give us a tour around the area.  Look at its wonderful roof–an old-fashioned fabric for just the right touch.  We whipped along having a fantastic time, waving at pedestrians and being waved at, people laughing with us as we tooled along.

    Juchitán, the largest city on the Isthmus of Tehuantepec, Oaxaca, (population about 100,000), prides itself on its culture and its traditions.  The iconic statue at the entrance to town is based on a photograph taken by one of Mexico's most outstanding photographers, Graciela Iturbide.  To quote the Getty Museum, "Between 1979 and 1988, Iturbide (b. 1942) made a series of visits to Juchitán, Mexico, where—in her words—she photographed the way of life there "in complicity with the people." Located in the state of Oaxaca, Juchitán is an ancient, communal, matriarchal society. It is also an open, fiercely independent, fiesta-loving city. Since the early twentieth century, the women of Juchitán—their dress and manner—have been national symbols, and Iturbide's photographs capture them in public and in private as they conduct their lives in this ancient city in the Isthmus of Tehuantepec."

    The 1979 Iturbide photograph, called "Nuestra Señora de las Iguanas" ('Our Lady of the Iguanas'), shows the power and dignity of a Zapotec woman, who carries on her head live iguanas that form a bizarre crown.

    In the Juchitán municipal market, we were talking about iguanas with a young muxe who sells ropa típica (regional clothing) of the area. He pointed across the aisle to a booth where the owner prepares licuados (smoothies, more or less) and lo and behold, we saw this big black iguana, tethered to a tree branch.  It's the Ctenosaura similis, native to the region and the most common iguana found (and hunted for food) in the Istmo.  In theory, the iguana is protected by law–but in practice, it and its eggs are much eaten in Mexico.  The meat is truly delicious, I didn't care for the leathery eggs.

    In the Juchitán market, a vendor offered iguana eggs, cooked in caldillo de jitomate (thin tomato broth) with green chiles.  The eggs are about 1.5" long.  I tried to eat one, but I really didn't like the texture or the flavor.  Imagine that, something I didn't like!

    We devoured several of these delicious fresh chiles jalapeño, roasted and stuffed with picadillo (a hash made of beef or pork plus chopped vegetables and fruits), then battered in beaten egg, fried, and served with delicious caldillo (thin tomato broth).

    I've eaten various kinds of smoked fish–whitefish, salmon, and others in the USA, marlin in Mexico–but I had never seen smoked tuna until chef Silvana and I went to the Juchitán market.  The vendor at this stand gave me a little chunk to taste.  Out of this world!  Smoked tuna, meaty and completely delicious, is now on my have-to-have-it-again list.  This pile of tuna pieces was about 18" high.

    Meet the Chrysobalanus icaco, a fruit endemic to the Istmo and known at least in Juchitán as jicaco–they're the rosy pink ones.  One name for them in English is the cocoplum.  As you can see in this week's photos, in Juchitán we saw several things that were brand new to us.  The jicaco fruit is prepared as a tea to combat diarrhea, and people cook and grind the leaves and stems to combat dysentery.  The seeds can be toasted and ground and prepared as an atole (thick drink usually served warm) to provoke vomiting.  Chef Silvana and I ate part of one raw fruit; it isn't at all sweet, hasn't a lot of taste, and is very astringent and medicinal.  It makes you pucker up and not in a good way!

    Flower seller, Juchitán market.  In this part of the Istmo, it's crucial to find and take advantage of shade wherever possible, and equally crucial to drink lots of water.  The time in late April-early May that we were in the Istmo, the daily temperatures climbed to well above 100ºF, with 100% percent humidity.  Thinking about climate change, I asked a young man in the market if this year's temperature and humidity were unusually high; he said, no, they were normal for the time of year.

    We bought several necklaces made of plumeria flowers (aka frangipani) at the Juchitán market.  The plant is named for French botanist Charles Plumier, who traveled to what is now Mexico and found it.  Described by Charles Linnaeus in 1753, it's called flor de mayo (May flower) in the Istmo.  I'd always thought it was native to Hawaii, but no: it's Mexican.  In the market, we saw many young women wearing these necklaces, saints' images were draped with them, and the flowers' sweet fragrance wafted through the air.

    The Juchitán market sets up every day on the streets, around a park and spread out to another close-by area as well.  We peered into the back of the city's municipal building to see what remains of the market where it was set up in the past.  Why?  Close to midnight on September 7, 2017, an extremely strong earthquake (8.1 on the Richter scale, said to have been the heaviest Mexico earthquake in over 100 years), with its epicenter just off the coast of Oaxaca's neighboring state Chiapas, hit the Istmo.  Juchitán, a city of well over 100,000 people, suffered severe damage, including to its municipal building.

    We were deeply disturbed to see how little recovery has been possible, and we later learned that there is no plan to rebuild the municipal building.  Its offices and the market have been relocated, the daily market now sets up outdoors, in a park near the destroyed building.  Wherever we looked in the city, huge piles of rubble left from damaged or demolished buildings (homes and businesses alike) remained in the streets and on the sidewalks.  People told us that there is no place to put the rubble, so it simply sits there, a constant reminder of the disaster.  Many people told us that none of the funds collected by the government and by other agencies have reached them; people continue to live in the streets, some under tarps and some with nothing to protect them from either the intense heat or the intense nightly rains.

    Another.  Of course Juchitán was not the only place seriously affected by the earthquake.  All of the towns in the area show similar damage.  You might well ask why few repairs have been made, why the funds collected and designated for direct assistance to the Istmo–estimated to be $45 million U.S. dollars–haven't been disbursed.  The answer: government corruption.  Sadly enough, it is all too common for donated funds to end up in someone's pocket rather than in the hands of those for whom it was destined.  Should there be another devastation of this type anywhere in Mexico, please ask me about alternate ways to donate money so that it will actually get to those who need it.

  • El Istmo de Tehuantepec :: Tierra del Mar, Tierra del Sol, Tierra del Buen Comer, y Tierra de Sorpresas

    Along the 2-lane highway between Tlacolula and the Isthmus, Chef Silvana and I stopped to have the gas tank filled.  (In Mexico, a gas station attendant performs that chore.  There's no self-serve here.)  In a little nicho between the men's and women's bathrooms, this figure on his miniature golden throne caught our attention.  El Niño Dios de Pemex patiently awaited a visit from anyone who cared to visit him.  He looks very sweet in his Pemex uniform–compete with company patch!–and straw hat.

Nancy González at Taller Bizuudi, 16 de septiembre #99, Ixtepec, Oaxaca.  That's her handsome son behind her.  The highly colorful embroidered huipil (blouse) and its companion enagua skirt, the characteristic dress of the women of the Istmo, are available in a range of quality and price in the markets and shops of the Istmo.

    Here's a good look at the traje de gala (fancy dress) of the tehuanas–the women of the Istmo de Tehuantepec.  Chef Silvana and I were invited to this dance–more about that in a minute!

    The Isthmus (Istmo, in Spanish) of Tehuantepec is the largest region in the state of Oaxaca, connecting the southwestern part of the state of Oaxaca with the western part of the state of Chiapas.  Part of the Istmo is on southern Oaxaca's Pacific Ocean coast, part is inland to the north and east.  Prior to the building of the Panama Canal, the Istmo was the shortest land trade route between the Pacific Ocean and the Gulf of Mexico; if you look at a map of Mexico, you'll see that the Istmo is the narrowest part of Mexico's "waist".  Fairly distant from more populated parts of Oaxaca, the Istmo has its own cultures, its own manners of dress, and its own foods.  Several distinct indigenous groups live in the Istmo, each with its own language.

    The first night we were in Tehuantepec, we enjoyed wonderful tlayudas at Cenaduría Juanita, an outdoor supper stand near our hotel.  The tlayuda is one of the iconic foods of Oaxaca; made from a very large corn tortilla (actually called tlayuda), the dish can be eaten for desayuno (breakfast), comida (Mexico's main meal of the day), or cena (late-evening supper)–or any time in between!  These were absolutely wonderful, maybe the best tlayudas I've eaten.

    Here are a lot of tlayudas–the simple tortilla–pressed, toasted, and ready to be prepared as tlayudas–the meal.  These measure about 13-14" in diameter.  Each one will be spread with asiento (the delicious brown fat at the bottom of a pot of newly rendered pork lard), then layered with smoothly blended black beans, then with tasajo (seasoned semi-dried beef) or cecina (seasoned semi-dried pork) or chorizo (spicy pork sausage) or even with shredded chicken.  Then one adds shredded quesillo (you might know it as Oaxaca cheese), then shredded fresh cabbage, slivers or slices of green chile (either fresh or pickled), sliced tomatoes, sliced avocado, fold it in half, and toast it on a griddle or a grill till the cheese melts.  Add the salsa that you like best and get your mouth ready for a taste of heaven.  Any tlayuda recipe is very forgiving: add this, leave this out, put more of this or that, add (as in the picture above this one) pickled red onions, turn your avocados into guacamole and add that.  However you prepare them, the only "requirement" is that you start with that freshly toasted tlayuda base.

    Chef Silvana holds a memela.  A small, freshly toasted tortilla is the base for a smear of asiento, a smear of creamy black beans, maybe some tasajo or cecina, a lot of queso fresco (fresh crumbly white cheese), some sliced avocado, and then topped with either red or green salsa.  These Oaxaca-style memelas are usually about four inches in diameter.

    The next morning, we went to the Tehuantepec market to see what it had to offer.  Mid-market, we met the delightful María del Carmen Suárez, who sells her famous home-made budín (in this case, a type of flan that she makes with breadcrumbs) and her excellent pickled vegetables.  We spent quite a while chatting with her; she sells at the market several days a week.  She did tell us that she'd be working the following day, but not the day after that.  We didn't ask why, but we later found out.  Remember that photo (up there ^^) of the tehuanas dancing?  The plot thickens.

    So: the surprise!  Silvana and I had been out the entire day, driving among several small towns around the city of Tehuantepec.  Mid-evening, we pulled back into town and parked, intending to go find something to eat.  Wait–music!  Drums!  Shouting!  Flags and banners!  What's that coming toward us?  A PARADE, and not just any parade–dancing down the street came a contingent of laughing, shouting muxes, the "third sex" of the Istmo world.  Much associated with the city of Juchitán, muxes also live and work–and play–in Tehuantepec.  These gorgeous creatures beckoned to us: "Vénganse!  Vénganse!  Vénganse con nosotras al Baile del Barrio!"  ("Come on!  Come on!  Come with us to our Neighborhood Dance!")  We scurried out into the street, linked arms with some of the beautiful muxes, and paraded through town, backed by flags, banners, flowers, and music. 

    A few blocks outside Tehuantepec's Centro Histórico, we were led to a blocked-off street covered with a lona (tarp), decorated with papel picado (cut paper streamers), and alive with joyful, dressed for the gala muxes, their companions, and people handing out plates of food, pouring tequila, passing around bottled beer, and hugging everyone who came along–including us.  We were invited to sit down, invited to eat, invited to drink.  And then, shouts of, "A bailar!  A bailar!"  ("Get up and dance!  Get up and dance!")

    And suddenly we heard a scream: "Amigaaaaaaas!  Amigaaaaaaaas!"  We turned around to see–María del Carmen, from the market!  She grabbed both of us and hugged us hard.  "AMIGAAAAAAS!"  So this was why she didn't work today–she had to get ready for the Baile del Barrio!  "María del Carmen, why didn't you tell us the other day?"  "Bueno–bueno, I wasn't sure…"  We laughed and hugged and were so glad that we actually had met someone before who was at the dance.  She looked beautiful, in her traje de gala.

    Our delicious dinner: Tehuantepec-style chicken in a flavorful, spicy sauce, served with macaroni salad and a pile of tortillas.  "Is that enough?  Do you want more chicken?  More tortillas?  Another beer?  Wait, here's another shot of tequila!  No, wait, let's dance first!"  The people at the dance made us feel entirely welcome and totally at home.

  • Bakeries and Their Basque Origins in Mexico City :: Please Wash Your Feet Before Entering!

    (Bread Segura, Legitimate Jalisco Style) is almost literally a hole in the wall on Calle 16 de septiembre in Mexico City's Centro Histórico.  There's just enough open space for a person to squeeze single file and sideways past a bread case and into the slightly wider part of the bakery to pick up a tray and tongs.  Buy bread here often enough and you probably won't fit through the door!  The bakery bears the Segura family name.

    A while back, Mexico Cooks! was invited to take a Mexico City tour of traditional bakeries.  Would I like to join them?  Did I leap at the chance?  You bet!  Universidad Iberoamericana, in the person of Maestra Sandra Llamas, planned the bakery tour to explore the 19th century presence in Mexico of Basque immigrants from the province of Navarre, Spain.  Those immigrants came from the Spanish Valley of Baztán to live in Mexico City at the end of the 19th and beginning of the 20th centuries. Ultimately, they became the most important European influence on Mexico's commercial bakeries, flour sellers, and yeast purveyors.

Their most famous sweet bread is the unique cuadros de queso (cheese squares).  Large, densely textured, and completely delicious, the bread balances between sweet and salty.  With a freshly squeezed glass of juice, it's big enough to be breakfast.  It's also addictive.  Trust me, eating one cuadro de queso today leaves you wanting another tomorrow.

    Maestra Sandra Llamas begins the tour of traditional bakeries by offering an overview of prominent Basque bakers in 19th century Mexico City.  Approximately 25 people of every young-adult and adult age participated in our three-bakery walking tour.

    During Porfirio Díaz's long presidency/dictatorship (1876-1910), all things European were very much the rage in Mexico.  Spanish and French goods were much more highly valued than goods made in Mexico.  During the Porfiriato (the name used to describe those nearly 35 years), many Basque families were accustomed to sending their adolescent first-born sons to the New World.  These young men arrived all but penniless in Mexico, and their families in Spain expected that they would make successes of themselves in their new homes.

    In 1877, there were 68 bakeries in Mexico City.  By 1898, the bakery count was up to 200.  Most of the bakery owners were Basques from Navarre.  They did not bring baking to Mexico, but they did bring a particular way of doing business.  They bought wheat fields, built urban rather than rural flour mills, bought bakeries, and soon dominated the market that catered to one of humankind's basic needs: hunger.

    Don Braulio Iriarte Goyeneche was born in Navarra, Spain, in 1860 and arrived in Mexico City in 1877.

    Arguably the most successful of these young Basques was the teenager who, as an adult in Mexico City, would be known as don Braulio Iriarte Goyeneche.  In 1877, his family forced him to leave Navarra and make a life for himself in this unknown world across the sea.  Industrious, hard-working, and creative, the young Iriarte began his career as an employee at one of Mexico's first commercial bakeries.  By the end of the 1800s, he was Mexico's king of flour, yeast, and bread.  The two keys to his success were his business acumen and the trustworthy cleanliness of his bakeries.

    During the fourth quarter of the 19th century, common practice meant that campesinos (country boys) worked barefoot in bakeries. They were required to remove their footwear–if they actually had shoes to wear–at the beginning of the workday and scrub their feet until they were spotless.  In an attempt to keep their feet clean, they were not allowed to go outside the bakery during the day–locked in with the ovens, barefoot boys and young men clad in the white pants and shirts of the campesino, danced 17 hours a day in the heat of a wood-fired bakery to knead the fresh-made dough .  It's no wonder that some customers complained occasionally that their bread was too salty: blame the extra salt on the campesinos' sweat blended into the flour mixture.  Don Braulio's bakeries were considered to be extremely sanitary because, unlike in other Mexico City bakeries, machinery did all the kneading.  No one's feet touched the dough.

    Conchas (shells, a kind of sweet bread) from Panadería El Molino.  These conchas are quiet large, and you can see that when I took this photograph, the price per piece was five pesos (at the exchange rate at the time, approximately 36 US cents).

    At the end of the 19th century in Mexico, the salary for a Mexico City panadero (baker) was two pesos per month.  Yes, two.  In 1903, Mexico City's bakers began what is known as la huelga de los bolillos (the bread strike).  Their demand?  A raise in salary to 2.5  pesos per month.  The bakers gave or threw away thousands of the individual-serving size loaves of the white bread known as bolillos to protest the bakery owners' reluctance to pay them a half peso more per month.  The bakery owners' main fear was that their young men would drink substantially more due to the salary increase.

    Sr. Iriarte rapidly rose to the highest level of prominence in Mexico's world of wheat, flour, and yeast.  Within 30 years of his arrival in Mexico City, he and a business partner owned numerous bakeries, had opened a flour mill in Toluca (near the urban center of Mexico City), and founded Mexico's first commercial yeast factory.  By the end of the 1920s, he was grinding nearly all of Mexico's wheat.

    In early 1922, Sr. Iriarte added another business to his stable: the Corona brewery, which has grown to become one of the largest and most important breweries in the world.  Its flagship beer, Corona, is the largest-selling Mexican beer in the world.  What's the connection between beer and bread?  Yeast.

    At El Molino, a bakery worker paints apricot syrup onto fresh-from-the-oven trenzas (braids) made of puff paste.  She will then sprinkle the braids with sesame seeds.

    You don't use your fingers to pick up bread in Mexico's bakeries.  Near the entrance to any bakery, you'll find trays and tongs for choosing what you want to buy.  Load up your tray and the check-out clerk will use your tongs to put your bread in its bag or box, then bang the crumbs off the tray and back into the rack it goes, for the next customer's use.

    Our tour took in three bakeries, all within a few blocks on Calle 16 de septiembre in Mexico City's Centro Histórico.  Pan Segura is the smallest of the three, barely big enough for four or five people to shop for bread at the same time.  Pastelería El Molino, just down the street, has been in business since 1918 and was purchased first by Carlos Slim Helú's Panadería El Globo and then was sold to Grupo Bimbo, a giant international wholesale bread-baking concern which bought both bakeries in 2005.

    The undisputed pan dulce and cake palace of Mexico–of anywhere in Mexico!–is the Pastelería La Ideal, at its original location at Calle 16 de septiembre 28, Centro Histórico, Mexico City.  If you haven't breathed in its air of flour and sugar and bread fresh from the oven, you haven't experienced Mexico City.  By all means make this wonder of the world a part of your next trip.

    The crown of our bakery tour was its visit to Pastelería La Ideal, long one of Mexico Cooks!' favorite spots in Mexico City.  The bakery is enormous.  Founded in 1927, the bakery specializes in…well, it specializes in being special.  The first floor is devoted to decorative and delicious gelatins, flans, small cookies called pasta seca, everyday cakes, and breads.  Hundreds of kinds of breads–350 different kinds, to be exact.  Unbelievable amounts of bread, but there it is: right in front of your eyes and absolutely believable.  This bakery alone (it has two more branches in the city) turns out 50 to 55 thousand pieces of bread every day, seven days a week.  The number boggles the mind.

    This branch of Pastelería La Ideal is closed for cleaning for exactly one hour a day.  If you go between five and six o'clock in the morning, you'll find the doors locked.  Otherwise, teams of master bakers (17 to 20 per shift, three eight-hour shifts per day) supervise and work with 350 workers to give us this day our daily bread.

    During the early morning hours, you'll see men and women rushing up and down Calle 16 de septiembre and its surrounding streets, carrying packages from La Ideal, tied up with string, tucked under their arms or dangling from outstretched fingers.  Mexico City's desayuno (breakfast), whether at home or at the office, almost always includes a pan, either salado or dulce (salty or sweet bread).  Cuernitos (like croissants), biscoches (biscuits), panqué (poundcake), pan danés (Danish pastry), bigotes (bread shaped a bit like a moustache), orejas (elephant ears), and conchas (shells), plus bolillo, telera, and all the other kinds of breads fly off the shelves and into Mexico City offices and home kitchens, to be served with a coffee or hot chocolate.

    The second floor of Pastelería La Ideal is entirely about big-deal party cakes.  You and the person who is giving a party with you sit down at a tiny desk with a La Ideal sales associate to have a serious discussion about cake: how many people you plan to invite for cake, how much other food there will be, what the occasion might be, how much you want to spend, and any other question you need to ask to have just the right cake made for your needs.

    This six-kilo cake (model J-28) decorated with a chocolate basket and pink sugar roses would be perfect for your aunt's birthday, Mother's Day, or any occasion where a small cake is necessary.  Hold onto your hats:

    Model L-20, decorated with clowns, balloons, ribbons, and stalactites made of icing, weighs 25 kilos and is designed for a child's birthday party.  Twenty-five kilos and four stories equal a mid-size cake at La Ideal.  There are cakes for quinceañeras (girls' fifteenth birthday parties), engagement parties, first communion parties, and wedding receptions that weigh as much as 50 kilos or more.  Those cakes are constructed with pisos (multiple vertical or horizontal layers), bridges, and some have actual running-water waterfalls.  The size of your expected crowd dictates the size of the cake.

    Real bolillo, currently very rarely seen even in Mexican bakeries, and much missed.  Slightly crusty on the outside, dense and flavorful on the inside…all but a thing of the past.   

    Some things at your bakery are just about the same as they were when the Basques came to Mexico: bread is freshly baked throughout the day and night, it's affordable, and some is still quite delicious.  Other things have changed completely: in most commercial bakeries, margarine or vegetable shortenings are used instead of butter, most everything is mechanized, and the lowly, delicious bolillo–Mexico's original white bread–is now more like cotton batting than like honest bread.  I have vowed to track down any real bolillo that still exists.  It's the best thing since–since before sliced bread!  I promise to report back–or if you know where to find it in Mexico City, please let me know!

  • In Retrospect: The First Annual Encuentro de Cocineras Tradicionales de Oaxaca. AND: Announcing the Dates for 2018!!

    Oaxaca hosted its first-ever Encuentro de Cocineras Tradicionales on April 24-25, 2017.  The festivities included more than 50 traditional home cooks from Oaxaca's eight regions, plus two days of conferences and other activities.  Doña Martina Sánchez is the person shown on the poster; she's making a tlayuda, a very large, thin corn tortilla that will subsequently be topped with any number of ingredients.

    From 1:00PM until 9:00PM, the cocineras tradicionales (traditional cooks) sold plates and platters and bowls of both well- and little-known dishes to the hordes and throngs of avid attendees.  More than 10,000 people showed up over the course of two days.  The Encuentro was a tremendous success in every respect.  Remember that admission to the Encuentro–including entry to its many conferences—is FREE.

    Señora Celia Florián, traditional cook, restaurant owner (Las 15 Letras, Calle Abasolo 300, Centro Histórico, Oaxaca), and one of the principal organizers of the Primer Encuentro de Cocineras Tradicionales de Oaxaca.  My dear friend Celia is a truly great woman, in every sense of the word.

    Oaxaca thrilled Mexico Cooks! with an invitation to an April 23-26 hosted press trip to Oaxaca, for the sole purpose of eating, drinking, photographing, and writing about the first Encuentro de Cocineras Tradicionales in that city.  The event took place during the celebration of the city's 485th anniversary of founding, and what a celebration it was!  The Encuentro, primarily organized by Señora Celia Florián and hosted by Oaxaca's city government and other organizations, the event included more than 50 traditional cooks who set up their cooking fires on the Plaza de la Danza, just in front of Oaxaca's beautiful Basílica de Nuestra Señora de la Soledad.

    From left to right: Rufina Mendoza Ruíz, Abigail Mendoza Ruíz, Mexico Cooks!, and Marcelina Mendoza Ruíz.  The Mendoza Ruíz sisters are arguably the best-known cocineras tradicionales in Oaxaca–and probably in all of Mexico.  Indigenous Zapotecas from Teotitlán del Valle, they operate Tlamanalli, their family restaurant.  Abigail Mendoza has literally traveled the world educating people about Mexican and Oaxacan food.  It's a privilege to be a friend of the loving Mendoza family.

    Tichindas en caldo de frijol: sweet-water mussels hand-gathered from their muddy flats along the coast of Oaxaca and prepared in a slightly spicy, slightly savory, slightly sweet sauce of smoothly-ground beans that knocked my socks off.  The mussels themselves, shells and all, were just over an inch long. From now on, when I think para chuparse los dedos (finger-lickin' good), this will be the dish in my mind.  I ate this bowl of mussels on the last day of the Encuentro; on the first day, a friend gave me the last tiny bit of a tamal with one of these mussels, still in the shell, wrapped in rich masa (corn dough). The next day, I went looking for those tamales, but they were completely sold out.  This bowl of tichinda soup was my consolation prize, but wow, a prize indeed.

    Three members of a fascinating and tender round table conference; one of the topics was "food memories from your childhood".  The Tehuanas (women from the Istmus of Tehuantepec) are (left to right): Sra.     Tejate, one of the iconic drinks of Oaxaca, is made from corn masa, Oaxacan chocolate, canela (Mexican cinnamon), pixtle (the finely ground large brown seed of the mamey fruit), and flor de cacao (also known as rosita). After those ingredients are beaten by hand (see video), water and ice are added.

    Mamey fruit for sale at a market in Oaxaca.  The mamey tastes very much like a baked sweet potato. The cut fruits–so beautiful!–have had their single large seeds removed to be sold separately.

    In this video, the vendor has added cold water and ice to the tejate mixture–it's almost ready to serve.  You can see that the surface of the tejate is foamy and thick, while the liquid she mixes from on high is thin, as it is supposed to be.  Tejate is a delicious and extremely refreshing cold chocolate drink.  When you're in Oaxaca, be sure to try it!

    The finished product: freshly made, chilled tejate, ready to be served using the hand-painted jícara floating in it.  We thoroughly enjoyed a cooling, large jícara-full (the jícara is the round fruit of southern Mexico's crescentia crujete tree) at Oaxaca's Mercado Benito Juárez.

    For two full days and evenings, thousands of hungry people lined up at this event for Oaxacan regional food specialties that are rarely seen outside the comunidades (small indigenous towns) where they are made.  Oaxaca residents, Mexicans from states near and far, and foreign tourists devoured anything and everything that the cocineras tradicionales prepared; everything I tasted was a thrill.  The Encuentro was enlivened by constant live music and other entertainment, the city was in full fiesta mode for its anniversary, and everyone was excited and happy to be present.

    YOUR ATTENTION PLEASE!!  Announcing the dates for the second Encuentro de Cocineras Tradicionales de Oaxaca: April 25-28, 2018, and once again in the Plaza de la Danza, in front of the Basílica de Nuestra Señora de Soledad in the city of Oaxaca.  Book your trip as soon as possible!  The event is a do-not-miss.  Not only has the organizing committee added an additional food and conference-filled day to the festivities, but more than 30 additional cocineras tradicionales will be present–85 total!–selling 400 DIFFERENT traditional platillos (dishes).  Every centavo in sales earned by the cocineras belongs to them–eat a lot, so these marvelous home cooks are able to take your pesos home to their pueblos and families!

    Part of the invited Mexico City press group took a culinary tour of Oaxaca's Mercado Benito Juárez.  I'd been there many times before, and nevertheless learned a tremendous amount from our guide.  We're sitting for our portrait at Aguas Frescas Casilda, an institution in Oaxaca.

    Over the course of many years, Mexico Cooks! has been invited to countless culinary festivals in Mexico.  The Primer Encuentro de Cocineras Tradicionales de Oaxaca will always stand out in my mind as extraordinary: as the first in Oaxaca and as being entirely exemplary of Oaxaca's marvelous hospitality.  Profound thanks to Celia Florián, to the Oaxaca city government, to the Oaxaca tourism department, to CANIRAC Oaxaca (Cámara Nacional de la Industria de Restaurantes y Alimentos Condimentados–Mexico's national restaurant association), to the cocineras tradicionales, and to all who made this marvelous event possible.  Trabajar en equipo siempre es mejor (it's always better to work as a team) has never been truer.  Three cheers and huge gratitude to all.

    The truth is, we ate more in three days than is really conscionable.  Between the traditional food at the Encuentro and our meals at Oaxaca's legendary restaurants, we all but waddled our way through the city.  Do come this year–it's worth every extra pound of weight that you'll take home!

  • The Annual Good Friday Procession of Silence, Morelia :: Viernes Santo Procesión del Silencio, Morelia, Michoacán

    Nuestra Señora de Dolores (Our Lady of Sorrows) leads the procession.  Hooded members of various Catholic cofradías (confraternities, or religious organizations founded in Europe) carry life-size statues on their wooden platforms approximately three kilometers through Morelia's Centro Histórico.

    Drummers marked the beat of Morelia's penitential Procesión del Silencio, Good Friday's silent procession commemorating both the crucifixion of Christ and his Mother's grief.  Only the drumbeat breaks the silence along the route.

    Hundreds of cofradía members marched in the still of this Good Friday night.  Foreigners, particularly those from the United States, are often shocked by the hoods, which to them are cultural reminders of the Ku Klux Klan.  In Mexico, there is no association between the two.  The procession is penitential and the hoods are a guarantee of anonymity and humility for the cofradía members.  They believe that humility and works of charity are best practiced anonymously.

    The Legion of Christ carry their banner and their lamps.  The Procesión del Silencio lasts about five hours.  During that time, all of Morelia's Centro Histórico is closed to vehicular traffic.  A large police presence looks through one's bags before letting you through to the procession area.

    Jesus carries the cross a cuestas (on his back) to Calvary.  More than 60,000 spectators stand attentively and in silence along the entire route of Morelia's Procesión del Silencio.

    At the end of the Procesión del Silencio, la Virgen de la Soledad (Our Lady of Solitude) follows the body of her crucified Son.  The platform bearing her image holds burning candles, a purple and gold velvet canopy, and banks of fresh flowers.

  • The Last Part of Christmas in Mexico: the Feast of the Candelaria and the Niño Dios.

    For about a month prior to Christmas each year, the Niño Dios (baby Jesus) is for sale everywhere in Mexico.  Mexico Cooks! took this photograph at the annual tianguis navideño (Christmas market) in front of the Mercado Medellín, Colonia Roma, Mexico City.  These Niños Dios range in size from just a few inches long to nearly the size of a two-year-old child.  Their diaper, molded with the statue, is their only clothing.  You get to dress him yourself!

    When does the Christmas season end in your family?  When I was a child, my parents packed the Christmas decorations away on January 1, New Year's Day.  Today, I like to enjoy the nacimientos (manger scenes), the Christmas lights, and the tree until the seventh or eighth of January, right after the Día de los Reyes Magos (the Feast of the Three Kings).  Some people think that date is scandalously late.  Other people, particularly many Mexican friends, think that date is scandalously early.  Christmas in Mexico isn't over until February 2, el Día de la Candelaria (Candlemas Day), also known as the Feast of the Presentation.

    Although Mexico's 21st century Christmas celebration often includes Santa Claus and a Christmas tree, the main focus of a home-style Christmas continues to be the nacimiento and the Christian Christmas story.  A family's nacimiento may well contain hundreds–even thousands–of figures, but all nacimientos have as their heart and soul la Sagrada Familia (the Holy Family: the Virgin Mary, St. Joseph, and the baby Jesus).  This centerpiece of the nacimiento is known in Spanish as el Misterio (the Mystery).  The nacimiento is set up early–mine is always arranged at the very beginning of December–but the Niño Dios does not make his appearance until midnight on the night of December 24, when he is soothed by a precious lullaby and placed in the manger.

    Between December 24, when he is tenderly rocked to sleep and laid in the manger, and February 2, the Niño Dios rests happily in the bosom of his family.  As living members of his family, we are charged with his care.  As February approaches, a certain excitement begins to bubble to the surface.  The Niño Dios needs new clothing!  How shall we dress him this year?

    According to Christian teaching, the Virgin Mary and St. Joseph took the baby Jesus to the synagogue 40 days after his birth to introduce him in the temple–hence February 2 is also known as the Feast of the Presentation. What happy, proud mother would wrap her newborn in just any old thing to take him to church for the first time?  I suspect that this brand new holy child was dressed as much to the nines as his parents could afford.

    Every February 2, churches are packed with men, women, and families carrying their Niños Dios to church in his new clothes, ready to be blessed and tucked gently away till next year.  Some families even buy him a wee throne, just his size, and seat him in a prominent place in their homes for the year.

    The Niño Dios as el Santo Niño Doctor de los Enfermos (the Holy Child, doctor of the sick).  He has his stethoscope, his uniform, and his doctor's bag.  This traditionally dressed baby Jesus has origins in mid-20th century in the city of Puebla.

    Every year new and different clothing for the Niño Dios comes to market.  A few years ago, the latest fashions were those of the Archangels–in this case, the Archangel Gabriel.

    The Niño Dios dressed as Peruvian San Martín de Porres, the patron saint of racially mixed people and all those seeking interracial harmony. He is always portrayed holding a broom.

    The ceremony of removing the baby Jesus from the nacimiento is called the levantamiento (lifting up).  In a family ceremony, the baby is raised from his manger, gently dusted off, and dressed in his new finery.  Some families sing:

    QUIERES QUE TE QUITE MI BIEN DE LAS PAJAS, (Do you want me to pick you up from the straw, my beloved)
    QUIERES QUE TE ADOREN TODOS LOS PASTORES, (Do you want all the shepherds to adore you?)

    GLORIA A DIOS EN LAS ALTURAS.  (Glory to God on high).

    One of the most popular 'looks' for the Niño Dios in Mexico City is that of San Judas Tadeo, the patron saint of impossible causes.  He is always dressed in green, white, and gold and has a flame coming from his head.

    Mexico Cooks!' very own sleeping Niño Dios.  He measures just 7" from the top of his head to his wee toes.  His purple and gold finery, hand-made for him using sequined and embroidered fabric from Oaxaca, is very elegant.

    This lovely video from Carapan, Michoacán shows both the gravity and the joy (and the confetti!) with which a Niño Dios is carried to the parroquia (parish church).

    Carefully, carefully carry the Niño Dios to the parish church, where the priest will bless him and his new clothing, along with a blessing for you and your family.  After Mass, take the baby Jesus home and put him safely to rest till next year's Christmas season.  Sweet dreams of his next outfit will fill your own head as you sleep that night.

  • Three Traveling Kings, Tamales, and Traditions: The *Rest* of Christmas in Mexico

    Most Mexicans eat traditional rosca de reyes (Three Kings' Bread) on January 6, the Feast of the Three Kings.  Its usual accompaniment is chocolate caliente (hot chocolate).  The rosca in the photo is normal size for a family–about 18" long.

    This is the rosca monumental–humongous rosca–as served in Mexico City's Plaza de la Constitución (better known as the Zócalo).  For the 2018 celebration, the rosca will contain 7,720 kilos of wheat flour, 2,000 kilos of sugar, 52,200 eggs (!), over 3,000 kilos of butter, 253 kilos of yeast, and all the rest of the ingredients necessary to accomplish a baking feat of this magnitude.  Over 2,000 bakers and other personnel will participate in its preparation.  Miguel Ángel Mancera, Mexico City's head of government, will once again preside over its slicing and serving–portions enough for approximately 250,000 hungry people.

    One of the many Three Kings traditions in Mexico City is having one's photograph made with them, either just before or on their feast day.  The photo above, taken at least 15 years ago in the city's Parque Alameda Sur, includes the Kings, some real live lambs, and (left to right), my friends Claire and Fabiola, and me.

    The Día de los Reyes Magos (the Feast of the Three Kings) falls on January 6 each year.  You might know the Christian feast day as Epiphany or as Little Christmas.  The festivities celebrate the arrival of the Three Kings at Bethlehem to visit the newborn Baby Jesus.  In some cultures, children receive gifts not on Christmas, but on the Feast of the Three Kings–and the Kings are the gift-givers, commemorating the gifts of gold, frankincense, and myrrh that they presented to the Baby Jesus. Many, many children in Mexico still receive special gifts of toys from the Reyes (Kings) on January 

    Typically, Mexican families celebrate the festival with a rosca de reyes (Three Kings' Bread).  The size of the family's rosca varies according to the size of the family, but everybody gets a slice, from the littlest toddler to great-grandpa.  Accompanied by a cup of chocolate caliente (hot chocolate), it's a great winter treat.

    My friend, Chef Arturo Camacho Domínguez, recently wrote a bit for me about the significance of the rosca.  He wrote, "The rosca de reyes represents a crown; the colorful fruits simulate the jewels which covered the crowns of the Holy Kings.  The Kings themselves signify peace, love, and happiness.  The Niño Dios hidden in the rosca reminds us of the moment when Saint Joseph and the Virgin Mary hid the Baby Jesus in order to save him from King Herod, who wanted to kill him.  The three gifts that the Kings gave to the Niño Dios represent the Kings (gold), God (frankincense), and man (myrrh).

    "In Mexico, we consider that an oval or ring shape represents the movement of the sun and that the Niño Dios represents the Child Jesus in his apparition as the Sun God.  Others mention that the circular or oval form of the Rosca de Reyes, which has no beginning and no end, is a representation of the infinity of heaven–which of course is the home of the Niño Dios."  Furthermore, the dried-fruit decoration (figs, ate [similar to fruit leather], and acitrón [candied cactus flesh]) represent the crowns of the Reyes Magos (the Three Wise Men).

    The plastic muñequito (little doll) baked into my most recent rosca measured less than 2" tall.  The figures were originally dried habas (fava beans), then were made of porcelain, but now they are generally made of plastic.  See the tooth mark on the head?  Mexico Cooks! is the culprit.  Every rosca de reyes baked in Mexico contains at least one muñequito; larger roscas can hold two, three, or more.  Mexico City's giant rosca normally contains 10,000 of these tiny figures.

    Tamales Tamaleras
    Tamaleras (special pots to steam tamales) do extra duty on February 2–the Feast of la Candelaria, when literally millions of tamales are devoured at seasonal parties all over Mexico.

    Tradition demands that the person who finds the niño in his or her slice of rosca is required to give a party on February 2, el Día de La Candelaria (Candlemas Day).  The party for La Candelaria calls for tamales, more tamales, and their traditional companion, a rich atole flavored with vanilla, cinnamon, or chocolate.  Several years ago, an old friend, in the throes of a family economic emergency, was a guest at his relatives' Three Kings party.  He bit into the niño buried in his slice of rosca.  Embarrassed that he couldn't shoulder the expense of the following month's Candelaria party, he gulped–literally–and swallowed the niño.

    El Día de La Candelaria celebrates the presentation of Jesus in the Jewish temple, forty days after his birth.  The traditions of La Candelaria encompass religious rituals of ancient Jews, of pre-hispanic rites indigenous to Mexico, of the Christian evangelization brought to Mexico by the Spanish, and of modern-day Catholicism.

    In Mexico, you'll find a Niño Dios of any size for your home nacimiento (Nativity scene).  Traditionally, the Niño Dios is passed down, along with his wardrobe of special clothing, from generation to generation in a single family.

    The presentation of the child Jesus to the church is enormously important in Mexican Catholic life. February 2 marks the official end of the Christmas season, the day to put away the last of the holiday decorations.  On February 2, the figure of Jesus is gently lifted from the home nacimiento (manger scene, or creche), dressed in new clothing, carried to the church, where he receives blessings and prayers.  He  is then carried home and rocked to sleep with tender lullabies, and carefully put away until the following year. 

    Each family dresses its Niño Dios according to its personal beliefs and traditions.  Some figures are dressed in clothing representing a Catholic saint particularly venerated in a family; others are dressed in the clothing typically worn by the patron saints of different Mexican states.  Some favorites are the Santo Niño de Atocha, venerated especially in Zacatecas; the Niño de Salud (Michoacán), the Santo Niño Doctor (Puebla), and, in Xochimilco (suburban Mexico City), the Niñopa (alternately spelled Niñopan or Niño-Pa).

    The veneration of Xochimilco's beloved Niñopan follows centuries-old traditions.  The figure has a different mayordomo every year; the mayordomo is the person in whose house the baby sleeps every night.  Although the Niñopan (his name is a contraction of the words Niño Padre or Niño Patrón) travels from house to house, visiting his chosen hosts, he always returns to the mayordomo's house to spend the night.  One resident put it this way: "When the day is beautiful and it's really hot, we take him out on the canals.  In his special chalupita (little boat), he floats around all the chinampas (floating islands), wearing his little straw hat so that the heat won't bother him.  Then we take him back to his mayordomo, who dresses our Niñopan in his little pajamas, sings him a lullaby, and puts him to sleep, saying, 'Get in your little bed, it's sleepy time!"  Even though the Niñopan is always put properly to bed, folks in Xochimilco believe that he sneaks out of bed to play with his toys in the wee hours of the night.

    Although he is venerated in many Xochimilco houses during the course of every year, the Niñopan's major feast day is January 6.  The annual celebration takes place in Xochimilco's church of St. Bernard of Sienna.  On the feast of the Candelaria, fireworks, music, and dancers accompany the Niñopan as he processes through the streets of Xochimilco on his way to his presentation in the church.

    Tamales

    From the rosca de reyes on January 6 to the tamales on February 2, the old traditions continue in Mexico's 21st Century.

  • Is It A Creche? A Manger Scene? In Mexico, It’s a Nacimiento.

    A Christmas tree may be the central focus of your home decoration during this joyous season of the Christian year.  In most parts of Mexico, though, the Christmas tree is a fairly recent import and the primary focus of the holiday is still on the nacimiento (manger scene, creche, or nativity scene).

    One of Mexico Cooks!' biggest delights every late November and early December is shopping for Christmas–hunting for gifts of course, but also, on the lookout for new items to place in my nacimiento (manger scene).  Truth be told, I have five nacimientos–or maybe six–that come out each Christmas season, but only one of them keeps growing every year.

    The tiny figures in this nacimiento are made of clay; the choza (hut) is made of wood.  The shepherds and angels have distinctive faces; no two are alike.  One shepherd carries firewood, another a tray of pan dulce (sweet breads), a third has a little bird in his hands.  The tallest figures measure only three inches high.  According to la leyenda navideña (the Christmas legend), even the animals in the stable bowed down to worship the Niño Dios (Baby Jesus).  Click on any photo to enlarge the image for a better view.

    Nin?o Dios Tonala? Nacimiento
    The Niño Dios is not placed in the pesebre (manger) until the night of December 24.  The Niño Dios for the clay nacimiento above is just over an inch long and is portrayed sleeping on his stomach with his tiny knees drawn up under him, just like a real infant.  This entire nacimiento was made about 35 years ago in Tonalá, Jalisco, Mexico.

    Mexican households traditionally pass the figures for their nacimientos down through the family; the figures begin to look a little tattered after traveling from great-great-grandparents to several subsequent generations, but no one minds.  In fact, each figure holds loving family memories and is the precious repository of years of 'remember when?''.  No one cares that the Virgin Mary's gown is chipped around the hem or that St. Joseph is missing an arm; remembering how the years-ago newest baby, now 32 and with a baby of his own, teethed on the Virgin's dress or how a long-deceased visiting aunt's dog bit off St. Joseph's arm is cause for a family's nostalgic laughter.

    Nacimiento en vivo (living nativity scene), Lake Chapala, Jalisco, Mexico.  In 13th century Italy, St. Francis of Assisi was the first to be inspired to re-enact the birth of Christ.  The first nacimiento was presented with living creatures: the oxen, the donkey, and the Holy Family.  Even today in hundreds of Mexican communities, you'll see living manger scenes.

    Holy Family, 18th century Italy.  The earliest nativity figures, made of clay, were created in 15th century Naples and their use spread rapidly throughout Italy and Spain.  In Spain, the early figural groups were called 'Belenes' (Bethlehems).

    A few weeks before Christmas, my tiny nacimiento de plomo (manger scene with lead figures, none over four inches high) comes out of yearlong storage.  The wee village houses are made of cardboard and hand-painted; each has snow on its roof and a little tree in front.  You might well ask what the figures in the photo represent: Sr. San José (St. Joseph, who in Mexico always wears green and gold) leads the donkey carrying la Virgen María (the Virgin Mary) on their trek to Belén (Bethlehem).  We put these figures out earliest and move them a bit closer to Bethlehem every day.  This nacimiento is the one that grows each year; I have added many, many figures to the original few.  This year the total number of figures is near 250.

    No matter how many figures are included in a manger scene, the central figures in any nacimiento are the Holy Family (St. Joseph, the Virgin Mary, and the Baby Jesus).  In Mexico, those three are collectively known as el misterio (the mystery).

    Nacimiento Grande
    A very small portion of one of the largest nacimientos on display in Mexico City.  It measures more than 700 square meters and includes thousands of figures.  They include everything you can think of and some things that would never occur to you: a butcher shop, a running stream and a waterfall, sleeping peasants, and washerwomen.  A nacimiento can include all of the important stories of the Bible, from Genesis to the Resurrection, as well as figures representing daily life–both today's life in Mexico and life at the time of Jesus's birth.  Photo courtesy El Universal.

    Papel roca (hand-painted paper for decorating a nacimiento), a choza (little hut), and two kinds of moss for sale in this booth at the Guadalajara tianguis navideño (Christmas market).  Over the course of years, Mexico Cooks! has purchased figures of a miniature pre-Hispanic loinclothed warrior, a tiny shoemaker working at his bench, a wee man sawing firewood, and a shepherd standing under a tree while holding a lamb. The shepherd's tree looks exactly like a stalk of broccoli and makes me smile each time I look at it. 

    Where in Mexico can you buy figures for your nacimiento?  Every city and town has a market where, for about a month between the end of November and the first week in January, a large number of vendors offer items especially for Christmas.  Some larger cities, like Mexico City, Guadalajara, Morelia, and others, offer several tianguis navideños (Christmas markets) where literally thousands of figures of every size are for sale.

    A few years ago, I found a tiny figure of the seated Virgin Mary, one breast partially exposed as she nurses the Niño Dios, who lies nestled in her arms.  It's the only one like it that I have ever seen.  She measures just about two and a half inches high.

    This booth at a tianguis navideño in Guadalajara offers Niños Dios in every possible size, from tiny ones measuring less than three inches long to babies the size of a two-year-old child.  In Mexico City's Centro Histórico, Calle Talavera is an entire street devoted to shops specializing in clothing for your Niño Dios.  The nacimiento is traditionally displayed until February 2 (Candlemas Day), when the Niño Dios is gently taken out of the pesebre (manger) in a special ceremony called the levantamiento (raising).  The nacimiento is then carefully stored away until the following December.

    The choza (hut) in the Mexico Cooks! nacimiento.  People and animals are waiting for the arrival of the Mary and Joseph, and for the birth of the Christ Child.  Click on any photo for a larger view.  In addition to the original lead figures, we now have indigenous figures found in a Mexico City flea market, antique lead animal figures (the rabbit behind the sleeping lamb, the little brown dog behind the kneeling shepherd), finely detailed santons from a trip to Provence, modern resin figures of every description, and many more.  Two hundred more–and counting!

    Nacimiento (Villagers)
    At another tianguis navideño, an assortment of clay figures for your nacimiento: villagers, chickens, and vendors.  Size and scale don't matter: you'll find crocodiles the size of a soft drink can and elephants no bigger than your little finger.  Both will work equally well in your nacimiento.

    Giant flamingos go right along with burritas (little donkeys).  Why not?

    Each traditional figure in a nacimiento is symbolic of a particular value.  For example, the choza (the little hut) represents humility and simplicity.  Moss represents humility–it's something that everyone steps on.  The donkey represents the most humble animal in all creation, chosen to carry the pregnant Virgin Mary.  The star of Bethlehem represents renewal and unending light.

    Turkeys were a new addition for Navidad 2016: a dear friend knows my nacimiento passion and found this pair of antique turkeys for me.  The bigger one is just 3" from beak to tail.  They'll fit right in with the other 200-plus figures!
