  • Ritos del Año Nuevo: Happy New Year, Mexican Style

    Chonitos amarillos
    In Mexico and other Latin American countries, women wear yellow underwear on New Year's Eve to bring good luck and wealth in the year to come.  Red underwear indicates a New Year's wish for an exciting love interest!  Whatever the color, be sure your unmentionables for Año Nuevo are newly purchased–recycling a former year's undies won't do the trick!

    Superstition or not, many here in Mexico have the custom of ritos del Año Nuevo (New Year's rituals).  Some rituals include foods, others prescribe certain clothing, and still others warrant attention for religious interest.

    Grapes 
    As the clock strikes midnight, it's common to eat twelve grapes–one at each ding, one at each dong of the bell.  While eating the grapes, you make a personal wish for each one you consume, welcoming the new year that's beginning.  Mexico Cooks! finds that it's helpful to write down the twelve wishes so as not to forget one or choke in the rush to swallow the grapes before the clock finishes striking the hour!

    Lentils
    Eating a tablespoonful of cooked lentils on New Year's Eve is said to bring prosperity and fortune.  You can also give raw lentils–just a handful–to family and friends with the same wish.

    Lit Match
    On a small piece of paper, write down the undesirable habits and customs you'd like to let go of in the New Year that's just starting.  Burn the paper, then follow through with the changes!

    3 Stones
    Choose three stones that symbolize health, love, and money.  Put them in a place where you will see them every day.

    Candles
    Light candles: blue for peace, yellow for abundance, red for love, green for health, white for spirituality, and orange for intelligence.

    Glass of water
    Spill clean water on the sidewalk in front of your house as the clock rings in the New Year.  Your house will be purified and all tears will be washed away.

    Pesos layers
    To have money for your needs all year, have some bills in your hand or in your pocket to welcome the arrival of the New Year.  Some people fold up the money and put it in their shoes!

    Suitcase!
    Take your suitcase for a walk.  Legend is that the farther you walk with your suitcase, the farther you'll travel.  Several New Year's Eves ago, Mexico Cooks! and a few friends celebrated by walking our suitcases around the block, and we all traveled far and wide during the new year that followed.

  • Puros Tamales: For Christmas in Mexico, It’s All About Tamales

    Sweet tamales de zarzamora (fresh blackberry tamales) are a specialty of the Meseta Purhépecha, Michoacán.

    When I was a child, my mother would sometimes buy a glass jar (I have conveniently forgotten the brand name) packed with what we called "hot tamales". Wrapped individually in parchment paper, covered in a thin, brackish, tomato-y fluid, these slippery travesties were all I knew of tamales until I moved to Mexico.

    The first Christmas season I that I lived South of the Border, my neighbor came to my door to deliver a dozen of her finest home made tamales, fresh from the tamalera (tamales steamer). I knew enough of Mexican culture to understand that to refuse them would be an irreparable insult, but I also was guilty of what I now know as contempt prior to investigation. I did not want tamales. The memory of those childhood tamales was disgusting. I smiled and thanked her as graciously as I could.

    "Pruébalos ya!" she prodded. "Taste them now!" With some hesitation I reached for a plate from the shelf, a fork from the drawer (delay, delay) and unwrapped the steaming corn husk wrapper from a plump tamal she said was filled with pork meat and red chile. One bite and I was an instant convert. My grin told her everything she wanted to know. She went home satisfied, wiping her hands on her apron. I downed two more tamales as soon as she was out of sight. More than 25 years later, I haven't stopped loving them.

    Christmas in Mexico is a time for special festive foods. More tamales than any other food come from the Christmas kitchen. Tamales of pork, beef or chicken with spicy red chiletamales of rajas con queso (strips of roasted poblano chiles with cheese), and sweet pineapple ones, each with a single raisin pressed into the masa (dough), pour in a steady, steaming mountain from kitchen after kitchen. 

    I asked my next door neighbor what she's making for Christmas Eve dinner. "Pues, tamales,que más," she answered. "Well, tamales, what else!" 

    I asked the woman who grooms my dog. "Pues, tamales, que más!" 

    I asked the woman who cuts my hair. "Pues, tamales, que más!"

    And my gardener. "What's your Mom making to eat for Christmas Eve, Jorge?" 

    I bet by now you know what he replied. "Pues,tamales, que más?"

    Obviously there are other things eaten on Christmas Eve in Mexico. Some folks feast on bacalao a la vizcaína (dried salt codfish stewed with tomatoes, capers, olives, and potatoes). Some women proudly carry huge clay cazuelas (rustic casserole dishes) of mole poblano con guajolote (turkey in a complex, rich sauce of chiles, toasted spices, and chocolate, thickened with ground tortillas) to their festive table. Some brew enormous ollas (pots) of menudo (tripe and cow's foot soup) or pozole (a hearty soup of prepared corn, chiles, pork meat, and condiments) for their special Christmas Eve meal, traditionally served late on Nochebuena (Christmas Eve), after the Misa de Gallo (Midnight Mass).

    As an exceptional treat, we're sharing part of a photo essay by my good friend Rolly Brook.  It's all about tamales, their ingredients and preparation. Rolly's friend Doña Martha cooks a whole pig head for her tamales; many cooks prefer to use maciza—the solid meat from the leg. Either way, the end result is a marvelous Christmas treat.

    Can we finish all these tamales at one sitting? My friends and neighbors prepare them with leftovers in mind. Here's how to reheat tamales so they're even better than when they first came out of the steamer.

    Recalentados (Reheated Tamales)

    Over a medium flame, pre-heat an ungreased comal (griddle) or heavy skillet. Put the tamales to reheat in a single layer, still in their corn husk wrappers. Let them toast, turning them over and over until the corn husks are dark golden brown, nearly black. Just when you think they're going to burn, take them off the heat and peel the husks away. The tamales will be slightly golden, a little crunchy on the edges, and absolutely out of this world delicious.

  • Seven Points of Tradition: The Piñata in Mexico

    Among clean ollas de barro (clay pots), plastic receptacles filled with engrudo (flour/water paste), and colorful, neatly stacked rounds of papel de china (tissue paper), Sra. María Dolores Hernández (affectionately known as Doña Lolita) sits on an upturned bucket.  She celebrates her birthday on December 24, and she still lights up–just like a Christmas tree–when she talks about her business and her life.

    "When I was a young woman, raising my family together with my husband, it was hard for us to make a good living here in Morelia.  We had eight children (one has died, but six girls and a boy survive) and we struggled to make ends meet.  My husband was a master mason, but I wanted to help out with the finances.  I knew a woman who made piñatas, and I thought, 'I can do that.'  So I started trying my hand, nearly 60 years ago."

    Doña Lolita adds another layer of newspaper to this piñata in progress.  "You can't put too much newspaper on the pot, because it will take too long to break," she explained.  "And you can't put too little on it, either, because then the first child to hit it will break it.  That's no good, either.  You just have to know how much to use."  Click on the photo to enlarge it and get a good look at the clay pot inside the paper maché.

    "The woman who made piñatas wouldn't give away her secrets, so I had to figure everything out for myself.  You should have seen me the first time I tried to make a bird's beak for a parrot-shaped piñata!  A man I knew told me to make it out of chapopote (a kind of tar), so I did.  It hardened all right, but later in the day the weather warmed up and that beak dripped down to here!  What a mess!  I finally figured out how to make the shape out of paper, but I just about broke my head thinking about it!"

    Doña Lolita told me about the different grades of paper used to create different styles of decoration on the piñata, and she explained different kinds of paper-cutting techniques; she's absolutely the expert.  Here, her son-in-law Fernando cuts tissue paper for fringe.  His hands are so fast with the scissors it made my head spin; he can even cut without looking.

    "In those days, the clay pots cost four and a half pesos for a gross–yes, for 144. In the old days, I usually sold about 7,000 piñatas every December, so you can imagine the investment I made just in clay pots.  In the 1960s, I could sell a large piñata for seven pesos.  Now–well, now the pots are much more expensive, so naturally the piñatas cost more, too.  The large ones cost 45 pesos.  This year, I'll sell about 1,000 piñatas just for the posadas. "

    "When my daughter Mercedes was about eight years old, she wanted to learn to make piñatas.  She'd been watching me do it since she was born.  So I taught her, and I've taught the whole family.  Piñatería (making piñatas) is what's kept us going."  Doña Lolita smiled hugely.  "My children have always been extremely hard workers.  There was a girl for each part of making the piñatas.  Every year, we started making piñatas in August and finished at the beginning of January.

    "One time, we had so many piñatas to finish that I didn't think we could do it.  So I thought, 'if we work all night long, we can finish them by tomorrow morning.'  Only I couldn't figure out how to keep the children awake to work all night."  She laughed.  "I went to the drugstore and bought pills to stay awake.  I knew I could keep myself awake, but I gave one pill to each of the children.  And in just a little while, I was working and they were sleeping, their heads fell right down into their work!  What!  Those pills didn't work at all!  The next day I went back to the drugstore and asked the pharmacist about it.  'Oh no!  I thought you asked me for pills to make them sleep!' he said."  Doña Lolita laughed again.  "We finished all the piñatas in spite of those pills, but you had better believe me, I never tried anything that foolish again."

    Oswaldo Gutiérrez works on this piñata in the doorway of the tiny taller.  Doña Lolita has taught many people the art of creating traditional piñatas, but her family and her loyal customers say she's the best piñatera (piñata maker) in Morelia.

    "People come from everywhere to buy my piñatas.  I don't have to take them out to sell; I only sell them here in the taller.  Because they're so beautiful and well-made, all the best people in Morelia–and lots of people from other places–come to seek me out and order piñatas for their parties.  I've taught my family that our work is our pride and our heritage, and my children have all taught their children the same.  That is our legacy, our family tradition."

    But why piñatas, and why in December?  During the early days of the Spanish conquest, the piñata was used as a catechetical tool.  The body of the piñata represented Satan; each of the seven points symbolized the seven capital sins (pride, lust, gluttony, rage, greed, laziness, and envy).  Breaking the piñata equated with the triumph of good over evil, overpowering Satan, overcoming sin, and enjoying the delights of God's creation as they pour out of the piñata.  Doña Lolita's most sought-after piñatas continue the traditional style, but she also creates piñatas shaped like roosters, peacocks, half-watermelons, deer, half moons, and once, an enormous octopus!

    Now, for the nine nights from December 16 through December 24, Mexico celebrates las posadas.  Each evening, a re-enactment of the Christmas story brings children dressed as la Virgencita María (ready to give birth to her baby) and her husband Sr. San José (and a street filled with angels, shepherds, and other costumed children) along the road to Bethlehem, searching for a place to stay.  There is no place: Bethlehem's posadas (inns) are filled.  Where will the baby be born!  For the re-enactment, people wait behind closed doors at certain neighborhood houses.  The santos peregrinos (holy pilgrims) knock, first at one door, then another.  At each house, they sing a song, begging lodging for the night.  At each house, the neighbors inside turn them away in song: 'No room here!  Go away!  Bother someone else!'  Watch a lovely slide show: Las Posadas.  

    Cacahuate
    Freshly toasted cacahuates (peanuts) also stuff the piñata.  The wooden box holding the peanuts is actually a measure, as is the oval metal box.

    After several houses turn away la Virgen, San José, and their retinue, they finally receive welcome at the last designated house.  After the pilgrims sing their plea for a place to stay, the guests assembled inside sing their welcome,  "Entren santos peregrinos…" (Come in, holy pilgrims…).  The doors are flung open, everyone piles into the house, and a huge party starts.  Traditional foods like ponche (a hot fruit punch), buñuelos (a thin fried dough covered with either sugar or syrup), and tamales (hundreds of tamales!) pour out of the kitchen as revelers sing villancicos (Mexican Christmas carols) and celebrate the coming of the Niño Dios (the Child Jesus).  Finally, all the children line up to put on a blindfold and take swings at a piñata stuffed with candy, seasonal fruits, and peanuts.

    Mandarinas
    Mandarinas (tangerines) are in season at Christmastime and round out the goodies in lots of piñatas.

    Piñatas Terminadas
    The piñata, stuffed with all it will hold, hangs from a rope during the posada party.  A parent or neighbor swings it back and forth, up and down, as each child takes a turn at breaking it open with a big stick.  Watch these adorable kids whack away.

    The piñata, lovely though it may be, is purely temporary.  Nevertheless, happy memories of childhood posadas with family and friends last a lifetime.

  • How Mexico Sees Our Lady of Guadalupe: Images of Love

    The annual feast of Nuestra Señora de Guadalupe (Our Lady of Guadalupe) falls on December 12.  Nuestra Señora de Guadalupe is Mexico's patron saint, and her image adorns churches and altars, house facades and interiors, taxis, private cars, and buses, bull rings and gambling dens, restaurants and houses of ill repute. The shrine of Our Lady of Guadalupe, la Basílica, is a place of extraordinary vitality and celebration. On major festival days such as the anniversary of the apparition on December 12th, the atmosphere of devotion created by the hundreds of thousands of pilgrims is truly electrifying.

    The enormous Basílica of Nuestra Señora de Guadalupe in Mexico City is the most visited pilgrimage site in the Western Hemisphere. Its location, on the hill of Tepeyac, was a place of great sanctity long before the arrival of Christianity in the New World. In pre-Hispanic times, Tepeyac had been crowned with a temple dedicated to an earth and fertility goddess called Tonantzin, the Mother of the Gods. Tonantzin was a virgin goddess associated with the moon, like Our Lady of Guadalupe who usurped her shrine.

  • The Soul of Mexico: The Basílica of Our Lady of Guadalupe

    The Basílica de Nuestra Señora de Guadalupe (Our Lady of Guadalupe) in Mexico City.  This newest Basílica was constructed between 1974 and 1976.

    Mexico Cooks! and Judy went to visit La Morenita (a common nickname for Our Lady of Guadalupe) at her Basílica in Mexico City in February, 2008.  It was Judy's first visit to the shrine and I was practically bursting with the excitement of introducing her to the heart, the very soul, of Mexico.  The extreme devotion demonstrated by the pilgrims to the Basílica, the depth of personal faith in La Reina de México (the Queen of México), and the juxtaposition of the sublime with the not-so-sublime made the  trip well worth repeating.  We're going again in just a few days. 

    First on our list when friends visit Mexico City is always the Basílica of Our Lady of Guadalupe.  Once our friends here discovered that we were going, every single person's first question was, "Van a la Villa?" ("Are you going to the Basílica)" 

    To each inquirer we grin and answer, "Of course!  Vamos primero a echarle una visita a la virgencita." (The first thing we'll do is pay a visit to the little virgin!)

    The story of Our Lady's 1531 appearance in Mexico is familiar to every person who lives in this country.

    The Tepeyac hill and shrine were important pilgrimage places for the nearby Mexica (later Aztec) capital city of Tenochtitlán. Following the conquest of Tenochtitlán by Hernan Cortez in 1521, the shrine was demolished, and the native people were forbidden to continue their pilgrimages to the sacred hill. The pagan practices had been considered to be devil worship for more than a thousand years in Christian Europe.

    On Saturday, December 9, 1531, a baptized Aztec Indian named Juan Diego set out for church in a nearby town. Passing the pagan sacred hill of Tepeyac, he heard a voice calling to him. Climbing the hill, he saw on the summit a young woman who seemed to be no more than fourteen years old, standing in a golden mist.

    Revealing herself as the "ever-virgin Holy Mary, Mother of God" (so the Christian telling of the story goes), she told Juan Diego not to be afraid.  Her words?  "Am I not here, am I not your mother?"  She instructed him to go to the local bishop and tell him that she wished a church for her son to be built on the hill. Juan did as he was instructed, but the bishop did not believe him.

    On his way home, Juan climbed the sacred hill and again saw the apparition, who told him to return to the bishop the next day. This time the bishop listened more attentively to Juan's message from Mary. He was still skeptical, however, and so asked for a sign from Mary.

    Two days later Juan went again to Tepeyac and, when he again met Mary, she told him to climb the hill and pick the roses that were growing there. Juan climbed the hill with misgivings. It was the dead of winter, and flowers could not possibly be growing on the cold and frosty mountain. At the summit, Juan found a profusion of roses, an armful of which he gathered and wrapped in his tilma (a garment similar to a poncho). Arranging the roses, Mary instructed Juan to take the tilma-encased bundle to the bishop, for this would be her sign.

    When the bishop unrolled the tilma, he was astounded by the presence of the flowers. They were roses that grew only in Spain.  But more truly miraculous was the image that had mysteriously appeared on Juan Diego's tilma. The image showed the young woman, her head lowered demurely. Wearing a crown and flowing gown, she stood upon a crescent moon. The bishop was convinced that Mary had indeed appeared to Juan Diego and soon thereafter the bishop began construction of the original church devoted to her honor.

    News of the miraculous apparition of the Virgin's image on a peasant's tilma spread rapidly throughout Mexico. Indians by the thousands came from hundreds of miles away to see the image, now hanging above the altar in the new church.  They learned that the mother of the Christian God had appeared to one of their own kind and had spoken to him in his native language. The miraculous image was to have a powerful influence on the advancement of the Church's mission in Mexico. In only seven years, from 1532 to 1538, more than eight million Indians were converted to Christianity.

    The shrine, rebuilt several times over the centuries, is today a great Basílica with a capacity for 50,000 pilgrims.

    Juan Diego's tilma is preserved behind bulletproof glass and hangs twenty-five feet above the main altar in the basilica. For more than 477 years the colors of the image have remained as bright as if they were painted yesterday, despite being exposed for more than 100 years following the apparition to humidity, smoke from church candles, and airborne pollution.

    The coarsely-woven cactus cloth of the tilma, a cloth considered to have a life expectancy of about 40 years, still shows no evidence of decay. The 46 stars on her gown coincide with the position of the constellations in the heavens at the time of the winter solstice in 1531. Scientists have investigated the nature of the image and have been left with nothing more than evidence of the mystery of a miracle. The dyes forming her portrait have no base in the elements known to science.

    The origin of the name Guadalupe has always been a matter of controversy. It is believed that the name came about because of the translation from Nahuatl to Spanish of the words used by the Virgin during the apparition. It is believed that she used the Nahuatl word coatlaxopeuh which is pronounced "koh-ah-tlah-SUH-peh" and sounds remarkably like the Spanish word Guadalupe. 'Coa' means serpent, 'tla' can be interpreted as "the", while 'xopeuh' means to crush or stamp out. This version of the origin would indicate that Mary must have called herself "she who crushes the serpent," a Christian New Testament reference as well as a a reference to the Aztec's mythical god, The Plumed Serpent.

    In February 2008, we took the Metrobus to La Villa, a journey of about an hour from the neighborhood called La Condesa, where we were staying with friends, to the far northern part of the city. The Metrobus left us just two blocks from the Basílica.

    Pope John Paul II made five official visits to Mexico.  To many Mexicans, he continues to be the true Pope, Mexico's Pope.  This image of Pope John Paul II, protected by and devoted to Nuestra Señora de Guadalupe is found in both pictures and figures. It is still displayed in many Mexican homes.

    The street and the bridge to the Basílica are filled chock-a-block with booths selling souvenirs of La Villa. Everything that you can think of (and plenty you would never think of) is available: piles of T-shirts with the image of the Virgin of Guadalupe and that of Juan Diego, CDs of songs devoted to her, bandanna-like scarves with her portrait, eerie green glow-in-the-dark figurines of her, key chains shaped like the Basílica, statues of La Virgencita in every size and quality, holy water containers that look like her in pink, blue, silver, and pearly white plastic, religious-theme jewelry and rosaries that smell of rose petals, snow globes with tiny statues of La Guadalupana and the kneeling Juan Diego that are dusted with stars when the globes are shaken.

    In front of the Basílica, you can have your picture taken next to her image and with a variety of horses.  The caption on the yellow sign reads, "A Memento of My Visit to the Basílica of Guadalupe".

    There are booths selling freshly arranged flowers for pilgrims to carry to the shrine. There are booths selling soft drinks, tacos, and candy. Ice cream vendors hawk paletas (popsicles). Hordes of children offer chicles (chewing gum) for sale. We were jostled and pushed as the crowd grew denser near the Basílica.

    Is it tacky? Yes, without a doubt. Is it wonderful? Yes, without a doubt. It's the very juxtaposition of the tourist tchotchkes with the sublime message of the heavens that explains so much about Mexico. We needed to buy several recuerdos (mementos) for friends, but we were hard-pressed to decide what to choose. Some pilgrims buy before going into the Basílica so that their recuerdos can be blessed by a priest, but we decided to wait until after visiting the Virgin to do our shopping.  When we finished shopping, we discovered that a priest was stationed in a nearby booth to bless late purchases.

    The 17th Century Basílica is sinking into Mexico City's shifting subsoil.  The new Basílica is built in the same plaza.

    The present church was constructed on the site of the 16th-century Old Basílica, the one that was finished in 1709. When the Old Basílica became dangerous due to the sinking of its foundations, a modern structure called the new Basílica was built nearby. The original image of the Virgin of Guadalupe is now housed above the altar in this new Basílica.

    Built between 1974 and 1976, the new Basílica was designed by architect Pedro Ramírez Vásquez. Its seven front doors are an allusion to the seven gates of Celestial Jerusalem referred to by Christ. It has a circular floor plan so that the image of the Virgin can be seen from any point within the building. An empty crucifix symbolizes Christ's resurrection. The choir is located between the altar and the churchgoers to indicate that it, too, is part of the group of the faithful. To the sides are the chapels of the Santísimo Sacramento (the Blessed Sacrament) and of Saint Joseph.

    That February, on an ordinary day at the beginning of Lent, we entered the Basílica as one Mass was ending and another was beginning. Thirty Masses are often celebrated during the course of any day.  Pilgrims  pour in to place baskets of flowers on the rail around the altar.  People filled the pews and were standing 10-deep at the back of the church. There were lines of people waiting to be heard in the many confessionals.

    We stood for a bit and listened to what the priest was saying. "La misa de once ya se terminó. Decidimos celebrar otra misa ahora a las doce por tanta gente que ha llegado, por tanta fe que se demuestra" ("The eleven o'clock Mass is over. We have decided to celebrate another Mass at 12 o'clock because so many people have arrived, because of so much faith being demonstrated.")

    Making our way through the crowd, we walked down a ramp into the area below and behind the altar. Three moving sidewalks bore crowds of pilgrims past the gold-framed tilma. Tears flowed down the cheeks of some; others made the sign of the cross as they passed, and one woman held her year-old baby up high toward the Virgin. Most people moved from one of the moving sidewalks to another in order to be able to have a longer visit with the Mother of Mexico.

    When I visited several years ago, there were only two moving sidewalks. Now there are three.  Behind them was space for the faithful to stand and reflect or pray for a few minutes. The crush of visitors last February required that the space be devoted to movement rather than reflection and rest.

    We walked to the back of the Basílica to look at a large, heavy bronze crucifix exhibited in a glass case. The crucifix, approximately 3 feet high, is bent backward in a deep arch and lies across a large cushion. According to the placard and the photos from the era, in 1921 a bouquet of flowers was placed directly on the altar of the Old Basílica beneath the framed tilma. It was later discovered that the floral arrangement was left at the altar by an anarchist who had placed a powerful dynamite bomb among the flowers. When the bomb detonated, the altar crucifix was bent over backward and large portions of the marble altar were destroyed. Nevertheless, no harm came to the tilma and legend has it that the crucified Son protected his Mother.

    After a while, we reluctantly left the Basílica. With a long backward glance at the tilma, we stepped out into the brilliantly sunny Mexico City afternoon. The throngs in the Basílica atrium still pressed forward to visit the shrine.

    We stopped in some of the enclosed shops at sidewalk level and then continued over the bridge through the booths of mementos. After we bought small gifts, we moved away to hail a taxi. My heart was still in the Basílica, with our Mother.

    The Feast of Our Lady of Guadalupe falls on December 12 each year.  Think about her just for a moment as you go about your day.  After all, she's the Queen of Mexico and the Empress of the Americas.

    How to get there once you're in Mexico City:

    • From the Centro Histórico (Historic Downtown) take Metro Line 3 at Hidalgo and transfer to Line 6 at Deportivo 18 de Marzo. Go to the next station, La Villa Basílica. Then walk north two busy blocks until reaching the square.
    • Take the Line 1 Metrobus north to Indios Verdes from any of its prior stops.  Go down the stairs on the right, go to the traffic light, and walk two blocks to the right until you get to the Basílica.
    • From the Hidalgo Metro station take a microbus to La Villa.
    • From Zona Rosa take a pesero (microbus) along Reforma Avenue, north to the stop nearest the Basílica.
    • Or take a taxi from your hotel, wherever it is in the city. Tell the driver, "A La Villa, por favor. Vamos a echarle una visita a la Virgencita." ("To the Basílica, please. We're going to make a visit to the little Virgin.")

  • Mexico and Her Music: And The Band Played On

    A few nights ago some friends and I were having dinner at a local restaurant. A wonderful trio (lead guitar, second guitar, and bass) played a broad selection of Mexico's favorite tunes while we enjoyed our food and conversation. From the table behind us, a woman's voice rang out in English, "Boy, these mariachis are really good."

    Her comment, one I've heard over and over again, made me think about the many varieties of Mexican music. Not all Mexican music is mariachi, although many people assume that it is.

    It's just as incorrect to classify all Mexican music as mariachi as it is to classify all music from the United States as jazz. Mariachi has its traditions, its place, and its beauties, but there are many other styles of Mexican music to enjoy.

    Ranchera, norteña, trio, bolero, banda, huasteco, huapango, trova, danzón, vals, cumbia, jarocho, salsa, son–??the list could go on and on. While many styles of music are featured in specific areas, others, like norteña, banda, ranchera, and bolero, are heard everywhere in Mexico. Let's take a look at just a few of the most popular styles of music heard in present-day Mexico.

    Norteña
    Música norteña (northern music) will set your feet a-tapping and will remind you of a jolly polka. Norteña had its beginnings along the Texas-Mexico border. It owes its unique quality to the instrument at its heart, the accordion. The accordion was introduced into either far southeastern Texas or the far north of Mexico by immigrants from Germany, Czechoslovakia, or Poland. No one knows for sure who brought the accordion, but by the 1950s this rollicking music had become one of the far and away favorite music styles of Mexico.

The songs have a clean, spare accordion treble and a staccato effect from the drum, while the bass pounds out the deep bottom line of the music.

    Música norteña is popular everywhere in Mexico. Conjuntos norteños (bands) often play as itinerant musicians. These are the musicians who are often hired to play serenades in the wee hours of Mother's Day morning, who play under the window of a romantic young man's girl friend while she peeps from behind the curtain, and who wander through restaurantes campestres (country-style restaurants) all over Mexico to play a song or two for hire at your table.

    Banda de Viento and Banda
    Banda de viento and banda are similar musical styles: both have a military legacy. Each has moved in its own direction to provide different types of entertainment.

    In Zacatecas, the state banda de viento plays concerts day and night.

    Banda de viento (wind band, or brass band) originated in Mexico in the middle 1800s during the reign of Emperor Maximilian and Empress Carlota. Later, Presidents Benito Juárez and Porfirio Dí­az commissioned the creation of brass bands in their home state, Oaxaca, in imitation of the brass bands that entertained at the Emperor's court.

    The huge upsurge of popularity of brass bands in Mexico came in the early 20th Century. After the Mexican revolution, local authorities formed "Sunday bands" made up of military musicians who played in municipalities' plaza bandstands all over Mexico.

    There are regional differences in banda de viento style, but you can still take a Sunday stroll around many rural Mexican plazas to hear the tuba oompah the bass part, the trumpets blare, squeaky clarinets take the lead, and the tamborazo (percussion) keeps the beat.  Sunday municipal band concerts no longer exist in some large cities, but you can still hear weekly concerts in smaller towns.

    Banda music, which exploded onto the Mexican music scene in the 1990s, is a direct outgrowth of the municipal bands of Mexico. Banda is one of the most popular styles of dance music among Mexican young people. In small towns, we're often treated to a banda group playing for a weekend dance on the plaza or at a salón de eventos (events pavilion) in the center of the village. The music is inevitably loud, with a strong bass beat. You'll hear any number of rhythms, from traditional to those taken from foreign music. It's almost rock and roll. It's almost–??well, it's almost a lot of styles, but it's pure banda.

    Few foreigners go to these dances and that's a shame, because it's great fun to go and watch the kids dance. You might want to take earplugs; the banks of speakers can be enormous and powerful.

    The dancing will amaze you. Children, teenagers, and adults of all ages dance in styles ranging from old fuddy-duddy to la quebradita. La quebradita is a semi-scandalous style of dance which involves the man wrapping his arms completely around the woman while he puts his right leg between her two as they alternate feet and twirl around the dance floor. Complete with lots of dipping and other strenuous moves, la quebradita is a dance that's at once athletic and extremely sexual.

    Bolero
    In the United States and Canada, it's very common for those of us who are older to swoon over what we know as the 'standards'. Deep Purple, Red Sails in the Sunset, Smoke Gets in Your Eyes, and almost anything by Ol' Blue Eyes can take us right back to our youthful romances. Most of us can dance and sing along with every note and word.

    Here in Mexico, it's the same for folks of every age. The romantic songs from the 1940s, 50s, and 60s are known as boleros. The theme of the bolero is love–??happy love, unhappy love, unrequited love, indifference, ??but always love. I think just about everyone has heard the classic Bésame Mucho, a bolero written by Guadalajara native Consuelo Velásquez. This timeless favorite has been recorded by Frank Sinatra, Nat King Cole, and The Beatles, among countless other interpreters of romance.

    Armando Manzanero, born in 1935 in Mérida, Mexico, is one of the most famous writers of bolero. His more than 400 songs have been translated into numerous languages. More than 50 of his songs have gained international recognition. Remember Perry Como singing It's Impossible? The original song ??by Armando Manzanero ??is called Somos Novios.

    Crowds memorialize Pedro Infante, one of Mexico's greatest stars.

    Agustí­n Lara was another of Mexico's prolific songwriters. Before Lara died in 1973, he wrote more than 700 romantic songs. Some of those were translated into English and sung by North of the Border favorites Bing Crosby, Frank Sinatra, and yes, even Elvis Presley. The most famous of his songs to be translated into English included You Belong to My Heart (originally Solamente Una Vez), Be Mine Tonight (originally Noche de Ronda), and The Nearness of You.

    Ranchera
    The dramatic ranchera (country music), which emerged during the Mexican Revolution, is considered by many to be the country's quintessential popular music genre. Sung to different beats, including the waltz and the bolero, its lyrics traditionally celebrate rural life, talk about unrequited love and tell of the struggles of Mexico's Everyman.

    Ana Gabriel is one of today's reigning queens of música ranchera.  Listen to her sing one of her all-time great songs: Y Aquí Estoy   

    Ranchera finds its inspiration in the traditional music that accompanies folkloric dancing in Mexico. Its form is romantic and its lyrics almost always tell a story, the kind of story we're used to in old-time country music in the United States: she stole my heart, she stole my truck, I wish I'd never met her, but I sure do love that gal. Pedro Infante, Mexico's most prolific male film star, is strongly associated with the ranchera style of Mexican music. One of the original singing cowboys, Infante's films continue to be re-issued both on tape and on DVD and his popularity in Mexico is as strong as it was in his heyday, the 1940s. Infante, who died in an airplane accident in 1957 when he was not quite forty, continues to be revered and is an enormous influence on Mexican popular culture.

    Ranchera continues to be an overwhelmingly emotional favorite today; at any concert, most fans are able to sing along with every song. This marvelous music is truly the representation of the soul of Mexico, the symbol of a nation.

    Ana Gabriel is the queen, but Vicente Fernández is the king of ranchera. Listen to him sing one of his classics: "Volver, Volver"

    Vicente Fernández, whose ranch, huge restaurant, and large charro-goods store are located between the Guadalajara airport and Lake Chapala, is the current reigning king of ranchera–??indeed, he is considered to be the King of Mexico.

    Mariachi
    Mariachi really is the music that most folks think of when they think of Mexico's music. Mariachi originated here, it's most famous here, and it's most loved here. The love of mariachi has spread all over the world as non-Mexicans hear its joyous (and sometimes tragic) sounds. At this year's Encuentro Internacional del Mariachi (International Mariachi Festival) in Guadalajara, mariachis from France, Czechoslovakia, Canada, Switzerland and the United States (among others) played along with their Mexican counterparts.

    In the complete mariachi group today there are six to eight violins, two or three trumpets and a guitar, all standard European instruments. There is also a higher-pitched, round-backed guitar called the vihuela, which, when strummed in the traditional manner gives the mariachi its typical rhythmic vitality. You'll also see a deep-voiced guitar called the guitarrón which serves as the bass of the ensemble. Sometimes you'll see a Mexican folk harp, which usually doubles the base line but also ornaments the melody. While these three instruments have European origins, in their present form they are strictly Mexican.

    Mariachi Vargas de Tecalitlán is the most famous mariachi in the world.  Every year in Guadalajara they honor the festival with their presence at the Encuentro Internacional de Mariachi.  It's an unforgettable experience.  Listen to them now, and watch the audience singing along:

    The combined sound of these instruments makes the music unique. Like the serape (a type of long, brightly striped shawl worn mainly by Mexican men) in which widely contrasting colors are woven side by side–??green and orange, red, yellow and blue–the mariachi use sharply contrasting sounds: the sweet sounds of the violins against the brilliance of the trumpets, and the deep sound of the guitarrón against the crisp, high voice of the vihuela; and the frequent shifting between syncopation and on-beat rhythm. The resulting sound is the heart and soul of Mexico.

    One last video: you simply can't talk about Mexico's music without a deep bow to Juan Gabriel, one of the most beloved Mexican singers of all time.  He first recorded the lovely Amor Eterno, written for his deceased mother, in 1991.  It is a legendary classic.  Once again, the audience sings along with every word.

    Next time you go to your local music store, look on the racks of CDs for some of the artists and styles of Mexican music I've mentioned. You may be quite surprised to see how popular the different styles are in the United States and Canada. As the population of countries North of the Border becomes more Mexican, the many sounds of Mexican music follow the fans. Next thing you know, you'll be dancing la quebradita.

  • There’s Always Room for…Gelatina!

    My friend Sra. Abundis prepared this clear gelatina.  It's approximately 15" in diameter and stuffed with fresh red and green grapes, canned pineapple, and peaches.

    Whether you're having a midday meal at a traditional Mexican restaurant anywhere in the República or celebrating at a private party at the home of Mexican friends, you can be almost 100% sure that a prominent item on the dessert menu will be gelatins. As you browse the produce at any town's tianguis (street market) or elbow your way through the crowds at a fiesta patronal (patron saint's celebration), you'll see vendors selling plastic cups and glasses of—you guessed it, jewel-colored gelatin desserts. Gelatina is a shimmering sweet fact of life in Mexico, popular with young and old alike.

    What is this Mexican obsession with a food that smacks of 1950s Middle America? Delight in gelatin desserts has been prevalent in Mexico for years; marketing experts here report that it's eaten daily in nearly 90% of Mexican homes. Mexicans consume more gelatin desserts than nearly any other country in the world—three times the quantity of gelatin consumed in the United States alone. In restaurants, the dessert tray will almost always include a variety of gelatin desserts. When Señora Fulana (Mrs. So-and-So) is invited to a party at the home of her best friend, it's very traditional for her to take along a gelatin dessert, all fancied-up and ready for the admiration of the rest of the attendees. At a birthday party, the dessert of preference is rarely cake and ice cream. It's almost always a plate of cake and a jiggling serving of gelatin, which requires no refrigeration to maintain its shape.

    There are far more ways to prepare gelatin desserts in Mexico than your mother's Jell-O™ mixed with fruit cocktail or shredded celery and carrots. Some of the desserts are prepared with water, some with milk, and some are prepared as a layered combination of both.  Some are major productions involving hours of labor intensive preparation time.

    Sra. Abundis and Cristina prepared and painted this marvelous tiger gelatina for a child's birthday party.

    Several months ago it was my task to prepare individual serving cups of gelatin for a two-year-old neighbor's birthday party—it seemed like I made hundreds. I thought it would be a complicated and difficult project, but it turned out to be quite a lot of fun. After asking another neighbor's advice, I learned that it's possible to buy powdered gelatin at any dulcería (candy store) or grocery store. The variety of available flavors is amazing: in addition to the ordinary strawberry, lime, and orange, I also found pistachio, almond, tamarindo, and peach.

    While I could have kept my project simple, I decided to get fancy. No single-flavor cups of gelatin for this party! I read the directions printed on each bag and learned to prepare this flavor with water, that one with milk. I combined a layer of strawberry (prepared with water) with a layer of pistachio (prepared with milk). Recklessly, I disregarded the instructions to use water to prepare the peach flavor and used milk instead, combining an opaque peach-flavored layer with a clear orange-flavored layer.

    Gelatina_pinar
    Commercially made in Guadalajara for sale in supermarkets, this three-layer single-serving gelatina includes a fruit layer (complete with a prune and its pit), a milk-based layer, and a clear layer.  The gelatina comes with its own tiny yellow plastic spoon.  These 200 gram gelatins are prepared with preservatives and artificial coloring.  Each one costs 7.1 pesos, or 65 cents US.

    It's so simple. Of course you can do this at home, even North of the Border. Just buy two different flavors of your favorite brand of gelatin dessert powder, some four-ounce plastic glasses, and have at it. Prepare one flavor and fill each glass to the half-way point. Refrigerate and allow that flavor to set. Prepare the second flavor, using either milk or water, pour it on top of the already jelled flavor, and refrigerate until set.

    One traditional recipe is for Mousse de Rompope (eggnog-flavored gelatin dessert). It is so delicious that it bears repeating now.

    Rompope (rohm-POH-pay) Mousse with Strawberry Sauce

    The mousse:
    2 envelopes of unflavored gelatin
    1/4 cup water
    1 cup heavy cream
    2 cups rompope (Mexican eggnog flavored liqueur)
    1/4 teaspoon vanilla extract
    4 egg whites

    In a small bowl, sprinkle the gelatin onto the water and let stand until absorbed, about five minutes. Meanwhile, heat the cream slightly in a small saucepan. (Do not boil.) Remove from heat and stir in the gelatin, mixing well to dissolve. Strain into a bowl; add the rompope and vanilla and mix well. Set aside.

    In a large bowl, beat the egg whites until they form stiff peaks. Fold in the eggnog mixture, and then pour into a lightly greased 1.5 quart ring-mold, bowl or specialty pan. Refrigerate at least four hours, preferably overnight.

    Strawberry Sauce:
    1 pound strawberries, stems removed
    2 tablespoons sugar
    1 tablespoon almond extract, anisette or Frangelica (hazelnut flavored liqueur)

    Place strawberries, sugar and flavoring in a bowl and let stand for two hours. Purée in a blender, strain and set aside.

    Just before serving, remove the mousse from its mold and drizzle with strawberry sauce. Garnish with slightly sweetened whipped cream. If desired, the mousse can be molded with a graham cracker crust.

    The preparation of gelatin desserts has been raised to a fine art in Mexico. Special classes in gelatin preparation fascinate housewives and give rise to thriving cottage industry here. Recipes metamorphose from the relatively simple preparations in the preceding recipes to the most elaborate of flavor and design combinations. Recently, the craze for making individual clear gelatin desserts which contain flowers also made of gelatin has hit Mexico like a bombshell.

    Flower gelatins like this one, made and copywrited by the Abundis family, are called gelatinas encapsuladas.  The flowers are made with a syringe.  Neither Sra. Abundis nor Cristina took classes in making the flowers, although many handicrafts schools and individuals offer those courses.

    This week I was fortunate to spend some time with Sra. Abundis and her daughter, Cristina, who operate a small home-based business in Guadalajara.  The Abundis family invited me to come watch and take pictures as they prepared special gelatinas for a child's birthday party.   Mother and daughter have worked together for the last two to three years, preparing made-to-order gelatins for birthdays, baptisms, girls' fifteenth birthday parties, baby showers, engagement parties, and weddings.

    The gelatina personality of the day was Spiderman.  Cristina explained that the gelatin for the Spiderman mold and many more are milk-based, while other gelatins are water-based.  Milk gives the gelatina a more nutritious aspect than does plain water and also makes Spiderman's features show up better after they're painted.

    Ingredients
    In the Abundis kitchen, Spiderman is fresh out of the mold.  A selection of milk ingredients is lined up behind him, along with a small plate full of individual-serving Spiderman heads.

Abundis showed me the basic ingredients for the dessert; once the basics are assembled, they're flavored with vanilla.  Spiderman is prepared with powdered milk.  Other gelatinas are made with sweetened condensed milk or with evaporated milk.  The Abundis family uses pure cane sugar and unflavored gelatin for its desserts.  No preservatives are added.  These home-prepared gelatinas must be consumed within 48 hours of their preparation.

    Many fancy gelatinas are painted once they're chilled and set.  Spiderman is no exception.  The paints are special vegetable food coloring gel, manufactured here in Guadalajara.

    While Cristina painted, Sra. Abundis told me that when her relatives moved from Mexico City to Guadalajara in 1940, there was no gelatina in the city.  Finally the relatives found a source–one stall at the Mercado Corona in Guadalajara's Centro Histórico sold it.

    "The gelatina has to be very cold in order to paint it," Cristina commented.  "If it's not as cold and firm as possible, the paint will run."  Spiderman stayed briefly in the freezer between coats of food coloring gel.

    I asked Sra. Abundis and Cristina which molds are most popular for parties. "Right now, Spiderman is the one all the kids want.  Of course they also like Buzz Lightyear, Sponge Bob, all the Disney princesses, and Barbie.  The old favorites like Winnie the Pooh, Mickey Mouse, and Tweetie Bird are always popular."

    Cristina added, "For adult parties like weddings and baby showers, people want gelatinas encapsuladas, the ones with the flowers, to accompany their special cakes.  And it's funny, the kids gobble down their gelatinas, but the adults want to save theirs.  The flowers are so beautiful."

    "The people who ordered this Spiderman for their child's party will pick it up late this afternoon.  The party is tomorrow."  Cristina was happy that she finished the painting with no smears.  

    For dessert after your midday meal, for a snack or for a light supper, sweet wiggly gelatina satisfies every time. Cooling and slithery, a gelatina is just the ticket when you need a little something, but you don't want too much.

    They knew what they were talking about, way back then, when they said, "There's always room for…"

  • Calabaza en Tacha: Mexico’s Winter Squash, Cooked in Thick Syrup

    Mari, the woman who spoiled Mexico Cooks! by doing all of our housework in Morelia, once gave us a squash.  She brought two home from her rancho (the family farm) out in the country, one for her and one for us.  The squash wasn't very big, as winter squash go, but it was plenty for us.  Mari's first question, after we had happily accepted her gift, was whether or not we knew how to cook it.  "Con piloncillo y canela, sí?" (With cones of brown sugar and cinnamon, right?) 

    Even though we knew how to spice the squash and knew how to cut it apart, knowing and doing these things turned out to be worlds apart.  Faced with the project, we waffled and hesitated, intimidated by a large vegetable.  The squash sat on the counter for several days, daring us to cook it before it molded.  Then Chepo (one of the cats) toppled it over and rolled it around the counter, so we moved the squash outside onto the terrace table and gathered our nerve. 

    On Sunday, I finally decided it was Cook the Squash day.  I chose pots, knives, and gathered the rest of the simple ingredients for a mise en place.

    Cutting the squash in sections was the only difficult part of preparing it.  The shell of the squash is hard.  Hard.  HARD.  I was careful to keep the knife pointed toward the wall, not toward my body.  With the force I needed to cut the squash open, one slip of the knife could have meant instant and deep penetration of my innards.  Later that night, our friend Araceli told us that her mother usually breaks a squash apart by throwing it out a second floor window onto the concrete patio below!  The next morning, Mari told us that her husband had cut their squash apart with a machete.  I felt really tough, knowing that I'd been able to cut it open with just a knife and a few choice words.

    Once I had the (few choice words) squash cut open, I scooped out the seeds and goop and cut it into sections more or less 4" long by 3" wide.  I did not remove the hard shell.

    Meantime, I had prepared the ingredients for the almíbar (thick syrup) that the squash would cook in.  Mexican stick cinnamon, granulated sugar, and piloncillo (cones of brown sugar) went into a pot of water.  I added a big pinch of salt, tied anise seed and cloves into a square of cheesecloth and tossed the little bundle into the water.  The pot needed to simmer for at least three hours, until the syrup was thick and well-flavored.

    Several hours later (after the syrup thickened well), I added the pieces of squash to the pot.  Cooking time for this very hard squash was approximately an hour and a half over a low-medium flame. 

    As the squash cooks in the syrup, it softens and takes on a very appetizing dark brown color.  Calabaza en tacha is one of the most typically homey Mexican dishes for desayuno (breakfast) or cena (supper).  Well heated and served in a bowl with hot milk and a little of its own syrup, the squash is both nutritious and filling.

    Squash for breakfast!  On Monday morning, Mexico Cooks! served up a bowl of squash with hot milk, along with a slice of pan relleno con chilacayote (bread filled with sweetened chilacayote squash paste).

    Ingredients
    One medium-size hard shell winter squash (about 8" high)
    6 cups water
    14 3-oz cones of dark piloncillo (coarse brown sugar)
    2 cups granulated sugar
    4 Mexican cinnamon sticks about 2.5" long
    1 Tbsp anise seed
    1 tsp whole cloves
    Cheesecloth and string

    Preparation
    Heat the water in a large pot.  Add the piloncillo, the granulated sugar, and the cinnamon sticks.  Tie the anise seed and the cloves into a cheesecloth square and add it to the pot.  Cook over a slow flame until the liquid is thick and syrupy, approximately three hours.

    While the syrup is cooking, prepare the squash.  Cut it into serving-size pieces as described above.  If the squash shell is very hard, take adequate precautions so that you do not hurt yourself as you cut it in sections.  You can always throw it onto the patio!

    Add the squash pieces to the thickened syrup and simmer until the squash is soft and takes on a deep brown color.  Cool for 15 minutes or so before serving. 

    Re-heat for desayuno (breakfast) or cena (supper).  Serve with hot milk poured over it.

    Makes about 16 servings.

  • Mexico’s Paletas (Ice Pops): Look to Tocumbo, Michoacán

    When I was a little girl, a Popsicle was a big deal. Summertime meant that the ice cream truck, bell tinkling, would trundle through the neighborhood where I lived. After a frantic plea to Mom for money, she counted out coins and I raced to the corner where the rest of the kids were already gathered, waiting for the vendor to dig through his icy case for cherry, lime, orange, or the reviled banana. The odor of amyl acetate (the chemical used for artificial banana flavoring) remains cloyingly in my memory.

    Remember? Hot summer days made those frozen snacks melt quickly, down childish fingers and the side of the hand, down the wrist and almost to the elbow in sticky trails of blood red and pale green. Nips of the cold treat slid in a chilly track from tongue to stomach, giving a few moments relief from childhood summers' heat and humidity. We didn't care that they were artificially flavored; Popsicles were a summer joy. Once I was an adult, I left them behind in favor of more sophisticated gelatos and sorbets.

    Long before I dreamed of venturing to Mexico, Ignacio Alcázar of Tocumbo, Michoacán had a vision. Paletas—frozen treats similar to Popsicles—were on his mind. Tocumbo was a tiny village in the 1940s.  Life there was harsh and subsistence was difficult. Eking a hardscrabble living from the sugar cane fields of the region around Tocumbo depended as much on Mother Nature's vagaries as on a farmer's backbreaking work. In those days, the pay for peeling 2,000 pounds of sugar cane was two pesos. Campesinos (field workers) could expect to earn a maximum of three pesos a week.

    But making a living selling paletas depended solely on creating a desire for something delicious and refreshing to satisfy someone's antojo (whim). In the mid-1940s, Ignacio Alcázar, his brother Luis, and their friend Agustín Andrade left the misty mountains and pine forests of Michoacán and headed for Mexico City, the country's burgeoning hustle-bustle capital. The men had made paletas in Tocumbo for several years, but it was time to try their hand in the big city. 

    In 1946, the three men, illiterate native sons of Tocumbo, established an ice cream shop in downtown Mexico City. The new paletería (paleta shop) wasn't elegant, but it worked. People clamored for more and more paletas. The Alcázar brothers and Andrade expanded, and expanded again. They sold franchise after franchise of their paleta brainchild to their relatives, friends, and neighbors from Tocumbo. The single shop that the two men started became the most successful small-business idea in Mexico in the last half century, known across the country as La Michoacana. More than 15,000 La Michoacana outlets currently exist around Mexico, most of them owned by people from the town of Tocumbo.

    Mexico City alone has more than 1,000 La Michoacana outlets. Usually the paleterías are called La Michoacana, La Flor de Michoacán or La Flor de Tocumbo.  No Mexican town with more than 1,000 residents is without one. Only Pemex, the nationalized petroleum company, has blanketed Mexico so completely.

    When I moved to Mexico in 1981, a Mexican friend insisted that she was going to buy me a paleta. "A Popsicle?" I scoffed. She took me by the scruff of the neck and all but shoved me into the nearest La Michoacana. I peered into the freezer case and was amazed to see hundreds and hundreds of rectangular paletas, organized flavor by flavor, lined up in stacks in their protective plastic bags.

    And what flavors! Mango (plain or with chile), blackberry, cantaloupe, coconut, guava, and guanábana (soursop) were arranged side by side with strawberry, vanilla, and—no, that brown one wasn't chocolate, it was tamarindo. Some were made with a water base and some with a milk base. Every single paleta was loaded top to bottom with fresh fruit. There was nothing artificial about these. I was hard pressed to decide on just one flavor, but I finally bit into a paleta de mango and was an instant addict.

    The story of the paleteros (paleta makers) from Tocumbo piqued my curiosity. For many years I've been determined to visit this out-of-the-way town. I finally made the trip to the place where it all started. Getting to Tocumbo isn't simple, but driving the two-lane back roads winding along green mountains is lovely.

    The names of the towns I passed through (Taracuato, Tlazazalca, Chucuandirán, Tinguindín) roll off the tongue in the ancient rhythmic language of the Purhépecha (Michoacán's indigenous people). Women, teenage girls, and children wear beautiful ropa típica (native dress) as they walk to market or gather wood in the hills. Fragrant wood smoke mixes in the air with the crisp scent of pine. Wildflowers dot the roadsides and mountains with purple, orange, yellow and blue.

    The well-manicured entrance to the town of Tocumbo lets you know immediately that you have arrived. No statues of Miguel Hidalgo or Benito Juárez grace the junction, nor is there a proud plaque commemorating a favorite local hero. Instead, the townspeople have erected a two-story statue of (what else?) a paleta. I'd seen photos of the monument, but the actual sight of the huge frozen delight made me laugh out loud.

    Carefully trimmed trees, flowers, and lawns edge both sides of the road into town. Large, well-appointed homes line the streets and the local trucks and cars are recent models and very well maintained. Tocumbo has one of the highest per capita incomes of any town in Mexico.

    My first stop was at the Tocumbo parroquia (parish church). Named in honor of the Sacred Heart of Jesus, the church is modern and beautifully adorned with stained glass. The architect who designed the church is Pedro Ramírez Vázquez.  Arquitecto Ramirez also designed some of Mexico's most famous buildings, including the Basílica of our Lady of Guadalupe, the 1968 Olympic Games installations, Aztec Stadium, the National Anthropology Museum and the National Medical School buildings, all in Mexico City.

    Arquitecto Ramírez was one of the most outstanding building designers in Mexico; he died fairly recently and received all due honors at his funeral. It's particularly telling of the economic power of the town that the people of Tocumbo contracted with him to design their parish church.

    As I sat for a bit in the town plaza, two local women strolled across the square eating paletas. After we greeted one another, I asked who the best person in town would be to give me local history. They directed me to the mayor's office on the other side of the plaza.

    I spent several hours at the Tocumbo mayor's office talking with town official German Espinoza Barragán, who told me long stories of life and times in Tocumbo, and the history of the paleta.

    Sr. Espinoza mentioned that many people erroneously believe that all La Michoacana stores throughout Mexico are owned by one family. "You already know that the founders were Ignacio Alcázar, his brother Luis, and their friend Agustín Andrade, and that they sold the first La Michoacana franchises to their relatives and friends. After that, the relatives and friends sold franchises to their relatives and friends, and the business just continued to spread. With a simple formula of handmade products produced every day and sold inexpensively, the business has produced hundreds of jobs as well as a high standard of living that's different from any other town in the region."

    Sr. Espinoza commented, "All of our streets are paved, and all have street lights. People live very well here, although it's difficult to say how many actually do live here year round."

    I looked up from my notes. "Why is that?"

    "A lot of tourists from all over Mexico and many other countries pass through this town," he began. "Many see that our life here is peaceful, our climate perfect, and our town beautiful, so they ask about renting or buying a house here. Once they see Tocumbo, everyone wants to stay."

    I nodded in agreement. The thought had occurred to me.

    Sr. Espinoza nodded too. "People say, 'Find me a house to rent.' I just tell them to forget it, it's hopeless. Then they tell me, 'But so many of the houses here in town are vacant! Surely the owners would like to rent their houses.' I shake my head, even though up to 75 per cent of the houses here in Tocumbo are vacant for eleven months of the year.

    "The thing is, everyone comes home at Christmas. No matter whether so-and-so's family lives all year round in Chiapas or Tijuana working in their La Michoacana store, in December everyone is here. Where would they stay, if their houses were rented?

    "During the 1990 census, INEGI (the Mexican census bureau) tried to count the number of people in town. They counted about 2,400 people. But truly, triple that number call Tocumbo 'home'. No one misses the holiday season here. They come home to tell their stories, to find out the last word in the business, to look for a girlfriend, to get married, to have quinceañeras (a girl's15th birthday celebration), to baptize their babies. They put off all of these festivities for months, until the winter low season for selling paletas arrives and they can come home.

    "This year, the Feria del Paletero (Fair of the Paleta Maker) starts on December 22 and ends on December 30. There will be sports events, free paletas, rides for kids and adults, and other things for everyone to do. You should come."

    "The success of the Tocumbo paleta business must inspire people all over Mexico," I commented.

    Once again Sr. Espinoza nodded. "It's a kind of work that offers even the person with the least schooling a way to make a good living, without going to work in the United States and without getting involved in selling illegal drugs."

    He returned to the history of the business. "Of course, word of the success of the new paleta business in Mexico City reached Tocumbo really fast. All Tocumbo packed its suitcases and went to get in on the gold mine. Everybody was buying paleta stores. And the best is, all the contracts were made on the solid word of the parties, without any paperwork, and all the loans to start the businesses were made between the buyers and the sellers. No banks were involved.

    "This first generation of paleteros (paleta makers) felt the obligation to let everyone have a part of the success. Remember that Tocumbo is a very small town. Almost everyone is related to everyone else. Everyone of that generation had grown up together, and everyone shared just a few last names. The belief was 'today it's your turn, tomorrow it's mine'. And everyone lived by that.

    "Today, things are a little different, but only a little. There's still room for all the paleterías in Mexico, and the majority belong to Tocumbans. Even though other ice cream stores like Bing and Dolphy have opened and there are even new brands coming in from the United States, there's no other big success like we have had. To start with, the paleta is the people's business, not corporate business. Other businesses might spend huge amounts of money on advertising and special wrappings, but we Tocumbans don't run our businesses that way. We're flexible, we save our money, and we work very hard. The paleterías are open from early in the morning till late at night, every day of the year. Even when the owners are home for the holidays, their employees are working in the stores. We make only as many paletas as we can sell each day. We don't use chemicals in our paletas, and we adapt the flavors to the regions where our stores are."

    Sr. Espinoza went on to tell me that the most popular flavor paleta is mango, because it's the fruit that everyone in Mexico loves. He continued, "In the south of Mexico, we have to offer mamey, zapote, and plátano. Where people have more income, we can sell a paleta for ten or twelve pesos. Where income is lower, such as in the states of Chiapas and Oaxaca, we sell a paleta for seven or eight pesos. We keep our stores very simple, so everyone can feel comfortable to come inside. And we try to open our stores in places where lots of people congregate: near schools, near hospitals, and near sports facilities."

    The story of this business amazed me. I shook my head and said, "What was the next step for the paleteros?"

    "When we saw that so many Mexicans were living in the United States, the next logical move was to start stores there. We started moving there too, and opened the first shops in California, Texas, Arizona, and Florida. And now—now there are La Michoacana stores in Pennsylvania, in Chicago, and in New York. Next will be Central and South America, you'll see.

    "Did you look at the monument at the entrance to town?" Sr. Espinoza asked me.

    "On the way out of town, look at it again," he said. "Look, a little drawing of it is on my business card." He handed me the card. "See the blue ball of ice cream in the paleta? And see the paletas all over the ball?" I did see them. "The blue ball represents the earth, and the bright colored paletas cover it." He smiled at me. "And someday, paletas from Tocumbo, Michoacán will truly cover the globe."

    I have absolute faith that he's right.

  • Sugar Skulls, Sugar Cats, Sugar Fish, Sugar Angels: Day of the Dead Traditions in Mexico

    There's always a new wrinkle in hand-made sugar mementos made for each November's Día de los Muertos (Day of the Dead).  All of these photos are regional specialty items made in and around Pátzcuaro, Michoacán.  The sugar bottles (left to right) are Cazadores tequila, Bacardí rum, and Pedro Domecq brandy.  The nearly life-size bottles are decorated with icing, down to the last detail of the labels. 

    Today's sugar skulls, angels, and other sugar figures were, in bygone years, made of wood and clay.  Because wood and clay were so expensive and difficult to work with, artisans searched for materials that not only cost less but were easier to handle.  Sugar and some simple stabilizing ingredients proved to be ideal.  The sugar mixture is pressed into molds and allowed to dry before being unmolded and decorated.

    Once the sugar figures are formed and allowed to harden in molds, they are hand-decorated with stiff confectioner's icing.  The artisan uses a small plastic bag to hold the icing, squeezing tiny lines of decor onto the figures from a hole cut in the corner of the bag.

    Artisans report that the preparation and organization for sugar figure sales during the Día de los Muertos festivities begins in January, nearly an entire year before the holiday.  Due to the scarcity of molds for the sugar and the need to allow the sugar to dry to the necessary hardened consistency for decorating, making the figures is the work of many months.

    These figures represent the Purépecha indigenous population of the Lake Pátzcuaro region.  The woman wears her typical skirt, blouse, and rebozo (a type of shawl) and holds a plate of lake white fish, a regional culinary specialty.  The man beside her wears a large sombrero and some very fanciful clothing.

    Average prices for sugar figures are: catrina (skeletal female figure), 50 to 60 pesos; coffins, 8 and 10 pesos; large granulated sugar skulls, 70 pesos.  More elaborate sugar figures, such as the two in the photo above, are approximately 80 to 100 pesos apiece.

    The most traditional sugar skulls have a friend or relative's name across the forehead.  Some of these, just a bit over an inch high, have the name on a gold-colored tape above the eyes.  When you're ready to make a purchase, if you don't see a skull with the name you want, ask the artisan to write it on the skull with sugar icing–no extra charge!
